  • LC Pina Colada Recipe?

    Anyone have a really good l/c pina colada recipe? the few i've seen doin't really appeal to me, or use davinci coconut syrup (which i don't have). I'm thinking heavy cream, coconut extract, ice rum, maybe some coconut milk?

    I'll do a search tomorrow as well to see if i can find any regular ones that can be modified but thought i'd see if anyone had a good one they've tried.

    I bought an awesome mix when in the states called
    Daily's. 4g per serving, it's awesome! nice and creamy. but i'm pretty much out..so thought i'd try my own.

    Baic pina colada is cream of coconut, pineapple juice and rum. The cream of coconut is basically coconut milk thickened with starch and sweetened with sugar. Since you can't have any of that on low carb, you'll have to try to thicken the coconut milk.

    You can try to thicken it with that low carb thickeners like xanthum gum or guar gum, but I think those yeild a slimy texture.

    You might want to try adding some unflavored gelatin---the pina colada will be served chilled anyway, so the gelatin will "gel" the coconut milk up a bit.

    As for the pineapple juice, if your phase of the Diet allows it, I don't see why you can't have it.

    And unless you avoid alcohol, I would use rum extract because it tastes "fake".

      Not a recipe, but Baja Bob makes a low carb pina colada mix if you want to order it or look for it at the store.

        carb countdown orange pineapple juice has quite a lot of pineapple flavor to it. I combine it with coconut milk, ice, a thick polyd syrup, sweeteners and blend it. The polyd helps with the texture. Without it, the ice has a tendency to sink rather than float.
