I made some today.
I put olive oil, mushroroms, onions, and garlic in a pan. After these cooked a few minutes, I put the meat in, and seasoned it with salt and pepper. After I turned it, it got a little sticky, and I put a fair amount of beef broth into the pan, along with about 1/2 cup of frozen okra.
When it was all done, I sprinkled it with real parm cheese.

The way we cooked it is dredge it in well salted/peppered flour and fry in a half crisco-half butter thing. The "drippings" make awsome gravy. If you had this once in a while when you've had a light carb count day, I don't think it'd do TOO much damage since its a light coating.
I'd definently try making it with the Atkins bake mix.....I just love "gramma's cooking" too much to change the flour. I do watch how much I eat of it and steer clear of the mashed potaotes and gravy we usually have with it.AD Dogs are Angels
