  • Yellow Squash Recipes Wanted

    I have yellow squash coming out my ears...last count I had close to 30. I need recipes. I'm not quite overwhelmed with the green babies yet.

    I've sautee'ed this way and that way but I'm really looking for casseroles.

    So here is one I just found and will try tonight. Please give me yours.
    • 4 strips bacon
    • 5 medium yellow summer squash
    • 1/2 cup chopped onion - I might omit this and use mushrooms
    • 1 tablespoon butter
    • 2 eggs, beaten
    • salt and pepper to taste
    • 1/2 to 3/4 cup shredded Cheddar cheese
    PREPARATION:

    Slice squash about 1/4-inch thick; cook in boiling salted water until tender. Fry bacon until crisp; drain on paper towels. Crumble bacon and set aside. In bacon drippings, brown onions. Add butter, squash, eggs, salt and pepper. Cook, stirring, until eggs are cooked. In a 2-quart casserole dish, place half of the squash mixture. Sprinkle with half of the crumbled bacon and half of the shredded cheese. Top with remaining squash mixture, bacon, and cheese. Bake at 350° until hot and cheese is melted.
    Serves 4 to 6.

    Also the spaghetti squash are coming in thick and heavy. Think I oughta sorta an exclusive thread for those recipes?

    sorry don't have any caserole recipes, but i love to take yellow zucchini, onion, red and green peppers, green zucchini etc, toss it with olive oil, salt ppeper and grill it in a grill pan on the bbq. i could eat it this way every day! and it goes really far. i do up a whole bunch at once then freeze it raw in freezer bags and pull them out when i need them.

    sorry that's my only squash recipe!

      Hi there MrsLee!!!! Hugs sent!!!! you can take the squashand curry it for sure!!! it is wonderful in curries ..but also you can make a kimchee pancake out of it by scrambling some eggs ...stir fry the squash with some ginger and green chopped green onions... then add drained kimchee (amts vary to taste) then you dump the scrambled eggs on top and make it like a fritatta ....then you make a sauce of soy sauce toasted sesame seeds a pinch of that good Korean chile, ginger and some rice vinegar to taste
