well i don't have a rice substitute but I do have "sushi" alot...
I simply take my fish...tuna, shrimp, scallops, ikura (sorry don't know the english)....take them and wrap them in a piece of seaweed and dip in a bit of soy sauce...I don't miss the rice (too much) anymore....start: 8/18/03

Hmmm, if you can't just do the Sashimi thing....
All I can think of that would even vaguely taste right would be Jicama, and even that adds a sweet taste, and the texture will be completely different from rice. Could taste cool though

Grated raw cauliflower (easy to do in food processor) then sauteed till tender tastes a lot like rice esp. with soy sauce and ginger. It's not sticky, though, so I don't know how it could stay together (you could add egg like fried rice)5'5"

It's not sushi at all, but I get some of the same flavors by using wasabi mayonnaise (combine wasabi and mayo to taste--I make up a small batch and keep it in the fridge) to make salmon salad, tuna salad, shrimp salad, chicken salad, whatever. I add a little soy sauce and a few drops of ginger juice (mine's bottled, but grated fresh would be even better). Diced avocado's terrific in it too, or cucumber. I eat the salad as is, but you could definitely do a hand roll, or even a regular roll if your protein was in small enough pieces and you used enough mayo to bind it well.
As I say, not sushi, but delicious and easy--and if you like sushi, you'll like it. ;-)Cheat-free since day one (1/3/04)!

Korean California rolls
I make these for parties and they are fantastic!
you have to do a lot of cutting so arrange everything and then have someone help you
you
cut in thin strips and place in separate piles on plate in a circle with a bowl for the sauce in the middle the following
green onions
carrots (if post induction)
red bell peppers
daikon radish
spinach
and a think egg pancake (just beaten eggs cooked in a thin pancake in skilled until dry and done not brown
then take sushi style seaweed sheets cut them in half to make squares
make a pile on a separate plate
sauce
soy and wasabi...taste for flavor ...I love lots of wasabi!!!
pickled ginger on the side if you want
take a sheet of seaweed put some of each inside roll up and dip in sauce....I never have any on the plate left at a party when I take this for an appetizer!!!! people who may not like sushi love this!!!!
