  • Almond Meal...know any good uses?

    Hello, I just bought some Almond Meal from Trader Joe's. For a 1/2 cup it has only 3 carbs. I'm not sure how to use it. I thought I might try it as a breading or something.


    Any recipies or suggestions using this would be most appreciated.

    Breading is good, and it is also indispensable for baking low carb breads and cakes.

      Thanks Naja. I think I will try and look up some good baking recipies. I was also going to try it in meatloaf. And see if I can make fried chicken with it.

        I made the most wonderful cinnamon buns last night with almond powder.

        1 Tablespoon yeast
        1/2 cup soy milk
        1/3 cup butter
        1 egg
        1/2 teaspoon salt
        1 1/2 cups almond flour
        2 Tablespoon real bran flakes (Optional but the add fibre that can reduce the total carb count).

        Softened the butter in warm soy milk to mix with the yeast then beat in the rest of the ingredients. It makes a soft thick batter. Let rise in a warm place one hour. Doesn't rise too much but it will be fine anyways.

        Spread flat on parchement paper and top with 1/4 cup melted butter, 1/4 cup splenda, 1/2 teaspoon cinnamon, 1/3 cup chopped pecans and 2 tablespoons of bran flakes.

          I don't think it will work in meatloaf--not that the taste would be unpleasant, but I doubt that the almonds will bind the way breadcrumbs or oatmeal, say, do in the presence of egg. A good way to test it out would be to take a small amount of ground beef, 1/4 lb. or so, and add some almond flour and egg and whatever, proportional to the amount you'd use for a full recipe. Then sauté or even nuke a tablespoon of the mixture and see what happens. You can make adjustments as you go, keeping track so you know how much to use in your full recipe. Or if it's a real disaster, toss it--you'll only have wasted a small amount of food in the name of science. ;-)

          I like almond flour combined half and half with flaxseed meal as breading (dip chicken/fish/whatever in beaten egg first). We had it on tilapia last night, and this morning I had the leftovers for breakfast--delish! An advantage to using it is that since the fat content of both the almonds and flax is high, you don't need a large amount of fat to sauté with, and they brown beautifully.

            Thanks so much for your responses. I tried using it as a batter for fried chicken. Not bad. I will definately try those cinnamon rolls. And thanks for the ref for pancakes I will definately try those.

              Mixed with melted butter and a bit of vanilla flavored protein mix makes a great baked (or unbaked) crust for your cheese cake or jellied mouses.
