    I have a birthday coming up and I am a sucker for the b-day cake tradition. Does anyone has a cake recipe that is a bit more atkins friendly than the sugar-laden store bought cakes?

    omg Sadie has a great recipe for an almond meal cake ...I made it one time and it was fantastic....I am trying to locate it for you are nuts ok? otherwise any cheesecake works if you leave off the sugar!!!

        Here's the Almond Pound cake recipe. I love to have it with berries and whipped cream. I've also thought about making it in a loaf pan or soaking it in some dark rum. It's a really buttery moist cake, and has an awesome almond flavour. I think it would be a pretty forgiving recipe you can play around with the flavours.

        1 cup butter
        1 cup artificial sweetener --
        splenda granular
        5 eggs
        2 cups almond flour
        1 teaspoon baking powder
        1 teaspoon vanilla
        1 teaspoon almond extract
        -- or divinci carmel syrup
        Cream butter and splenda
        together in a large mixing
        bowl. Add eggs one
        at a time, beating after each
        one. Add flour and baking
        powder a little at a
        time until well blended. Add
        extracts. Bake in a 9 inch
        cake pan.

        It's 47g for the whole recipe i get about 9 pieces out of it. . I like to mix sweeteners, i use liquid sugar twin and cut back on the splenda to save on carbs.

                    Is almond flour lower in carbs? I have never heard of it.

                      Its ground almonds! So yes its lower in carbs than regular flour and way better for you! You can have it if you're on the nut rung!

                          where can I get this almond flour can you mack bread or pancakes with it I have looked in stores can not find it and yes at what temp dp you cook this at

                              The almond thread is under food and cooking chat.

                              I prepared the birthday cake recipe and made them cupcakes for easy freezing. I baked at 350 for 20 minutes.
