      I've seen some recipes online

      for lc pasta, in addition you can buy low carb pasta. If you want me to see if I can find a recipe for lc pasta let me know.

        I know this is a reaaally old post, but in case someone looks at it....
        I've had great success using spaghetti squash. Sounds wierd, but try it! I love it!

        First, you cut it in half and remove the seeds.
        To Bake: Put it cut side down on a lightly greased pan and
        bake in the oven at 350 degrees for 45 minutes,
        then turn it and bake until the skin is tender.

        To microwave: Put in a dish cut side-down with 1/4 cup water.
        Cover with clear wrap (Saran).
        Cook on high for 7-10 minutes.

        To boil: 20 minutes in 2 inches of water.

        To use after it's cooked: With a fork, scrape out the squash, it comes out in spaghetti-like strands!
        Pour on sauce, or I love mine with butter and fresh grated parmesan. Mmmmmm!

        1 cup serving: Fats 0.4g Protein 1.02g Carbs 9.96g

          Leeks! Slice lengthways so it's like tagliatelle then lightly blanche, drain and brown in butter. Yummy!

            have you tried zucchini?

            i don't like the low carb pastas (they all seem to have that same nasty undertaste) so i looked for alternatives and tried zucchini. it was just great! i saute it in a skillet (with onion) and spoon the sauce right over it. try it as a lasagna noodle as well. tasty and healthier than noodles!

              I saw suzanne summers make a fake pasta , she made like a crepe in a big skillet non stick don't brown just cook.both sides then she put it on a cutting board and cut in long strips. and used that for noodles.( she said Allens mom used to make them that way)

                not really pasta i guess, but i use fresh cauliflower and grate w/a cheese grater to form bits, boil lightly and voila- fake rice. since rice dosen't have much flavor this works just as well at matching the texture. great for stir fry!

                  the faux rice is great.

                  You can buy noodles in an Asian market called Shriataki and/or Konnyaku noodles that are carb free made from japanses yams.
