  • Picking some brains about potato subs

    Earlier I posted about Potato Soup in the celery recipes.....so now I can almost taste the yummyand oh-so-full-of-carbs starchy veggie.

    1) Since the pototoes (in potato soup) cook down to almost nothing...I'm thinking about trying to substitute califlower and maybe puree it and cook it with butter and celery and onion and a little water. Any hints/tips/other ideas?

    2) Had my weekly call with my dad and he mentioned he was making the pototo, green bean, sausage "thing". OMG I ALWAYS always way too much of this it is that yummy. We call it a "thing" because there's big chunks of potato (either peeling lots of small potatoes or cut the bigger ones into the size of 'new' potatoes), fresh green beans that we snap the ends off of and if they're really long snap in half, and then sausage (like hillshire farms...the tube, not like jimmy dean or the little link sausages) that are broken into 4in or so pieces. Everything is thrown into a pot and covered with water and boiled for about and hour and a half. Big chunks in a very thin broth....niether soup nor stew, its a "thing".

    The green beans are ok, and I found some low-carb sausage.....so trying to figure a pototo substitute. I was thinking maybe turnips for this one....maybe boiil it first and then put it in with the green beans and sausage to cook regularly? Again, tips/hints/other ideas would be extremely helpful.

    I know part of Atkins is that bottom line is you do have to give up some things and the way to really stick to this way of life is to be creative and find new foods like you like, but we've found our best defense from 'cheating' is to manipulate (sp?) our 'comfort foods'.

    Like i said, some things just have to be given up like my noodle casserole (wide egg noodles, cooked and corn, mixed, cheese slices put over and heated in oven till hot and melted) and my tuna noodle casserole (tuna, cream of mushroom soup and cooked wide egg noodles), but I'd like to keep as much as possilbe, if possible.

    Here is a soup recipe maybe this will be a good substitute for potato soup.
    Cauliflower and Cheese Soup in Crockpot


    1 med. head of cauliflower, separated into flowerettes
    1 med. onion, chopped
    1 stalk celery, chopped
    4 cups chicken stock
    2 cups cream
    1/2 tsp. Worcestershire sauce
    1 cup Cheddar cheese, grated
    salt and pepper
    chopped chives


    Put cauliflower, onion, celery, and chicken stock in Crock
    Pot. Cover and cook on low for 6-8 hours. Puree in blender. Return to
    Crock Pot. Blend in cream, Worcestershire, and cheese. Add salt and
    pepper to taste. Stir to mix well. Turn control to high and heat
    through; garnish servings with chopped chives.
    Serves 4 to 6.

      Kisses I would think that cauliflower would also work well in your thing, and turnips also for that matter. Your recipe sounds delicious. I just buy plain sausage, either bulk or links depending on what I can find. Do you use a particular flavor sausage. I need to try your thing recipe.

        I think we usually used the hickory smoke flavor or the hot italian, but I haven't tried the low carb sausage so I'm not sure what to pick.


        Oh! And something I didn't mention, but the thing doesn't really need any seasoning. the sausage puts enough fat/spices into everything, but every once in a while it needs some salt....probably dependent on the sausage used.

          I also have a dish like the thing...but I always used cabbage wedges, carrots, celery and potatoes. So I just leave out the potatoes and the carrots sometimes I substitute radishes and its still delicious! good luck with your dish!
          *edited to add* I never buy anything labeled "low carb". I just make sure what I buy doesnt have added corn syrup, or sugar and things like that while I choose the one with the lowest carbs.
