    Ok, I bought 2 avocados this weekend. I dont know if I like them or not but I have seen them mentioned in some books as good low-carb foods.

    Can someone give me a decent recipe using avocados. Thanks.

    But to get you started:

    CRAB 'N AVACADO SALAD

    Serving Size : 4 Preparation Time 00
    Categories : Salads Seafood

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    Pace Picante Sauce
    1/3 c Mayonnaise
    2 tb Tomato paste
    1 tb Chopped Dill Pickle
    1 lb Crab meat in bite size pieces
    1/4 c Thinly sliced or chopped
    -ripe olives or pimiento-
    -stuffed green olives, as
    -desired
    4 Ripe avacados
    2 Hard-cooked eggs, sliced or
    -cut into wedges (opt)

    For dressing, in small bowl, comebine 1/3 cup of the
    Pace Picante Sauce, mayonnaise, tomato paste,and pickle
    ; mix well. In large bowl combine crab meat,
    olives and 3/4 cup of the dressing; mix gently to
    avoid breaking up crab meat. Cut avacados in half
    lengthwise; peel and discard pits. Spoon additional
    Pace Picante Sauce onto 4 serving plates; top each
    with 2 avacado halves and fill indentations with crab
    meat mixture. Serve with remaining dressing and
    additional Pace Picante Sauce. Garnish with eggs, if
    desired.

    AVACADO SOUP WITH GREEN PEPPERCORNS

    Recipe By :
    Serving Size : 4 Preparation Time 00
    Categories : Soups

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    1 md Onion, diced
    1 tb Ground coriander
    1 tb Olive oil
    4 lg Ripe avacados, peeled,
    -pitted and coaresly chopped
    1/3 c Green peppercorns in brine,
    -drained
    Salt to taste
    Pepper to taste
    2 Garlic cloves, minced
    1 t Cumin
    2 1/2 qt Light chicken stock
    Cilantro leaves for garnish

    In large saucepan, cook the onion, garlic and spices
    in the olive oil over moderate heat for 10 minutes,
    stirring often. Add avacados and stock, bring to a
    boil, then reduce heat to medium. Cook 20 minutes.
    Cool to room temperature. Puree soup in blender until
    smooth. Return to pan, bring to a boil, add
    peppercorns, reduce to moderate heat and cook 10
    minutes. Serve garnished with cilantro and peppercorns.

      I use avocado to make a salsa. I have used the salsa over salad and salmon. The ingredients are:

      avocado, tomato, onion, olive oil, and cilantro.

      I only use maybe a slice of tomato and onion it depends on your taste buds.

        Avacado

        I like to just mash them with a fork, add jalepeno, garlic, cilanto and salt. I ususally spread it over a nice steak.

          I think ensive that only one half an avocado per day is allowed on induction. Try rubbing a bit of vinegar or lemon juice on the cut side - do not peel, and wrap tightly in plastic wrap. Unless you can share with the family, of course. Actually, this could be so rich in fat that you could stall :yikes so it would be best to only try eating 1/2 this week to test out your resistance.

          I love avocado plain with just a sprinkling of salt.

              you are allowed a few treat foods and half an avocado is one of the choices. A good choice too with the potassium and beneficial fats!

                Yes, just plain with salt...absolute heaven! Also, along with not peeling the unused half, leave the seed in too...it will keep it fresh. If you make guacamole (sp) or dip with it, put the seed in the dip to keep it from turning brown.

                  avocado and caviar

                  someone posted this recipe a while back and it is fantastic ....you may not like caviar but there is something that speaks evil/wonderful about this one I tipped it in jicama!!!! wonderful party dip the bowl did not need washing!!!

                  small jar of decent but not expensive caviar reserve some eggs for sprinkling on top
                  2 avacados smashed
                  a couple of tbl mayo
                  lime juice of one lime
                  salt and pepper

                  puree avacado with mayo lime salt and pepper until smooth then stir in caviar ...the black caviar tastes wonderful but the color leaves a bit to be desired...the pink eggs are much better looking!
                  sprinkle with the remaining eggs and a bit of chopped parsley for garnish.....bring on the vodka ...just kidding not on induction darn it!

                  a safe induction friendly serving is about 1/8of this with a few thin slices of jicama for dipping ...measure to be sure....

                    Apparently California avocados have more fat in them than Florida avocados.

                    I'd love to find a good guacamole recipe.

                        One of our favourite meals, even before I started Atkins, was a regular salad of mixed veggies, chunks of avocado on the side and whatever salad dressing you like. I'd saute chicken and load cajun spices on it. I like my cajun chicken pretty peppy, and when you take a bite of spicy chicken, then a bite of cool creamy avocado...yummmm....SO good!

                          avacado omlette

                          I make an egg beaters omlette in the morning with thin slices of tomato and feta cheese and then at the very end, half and avacado. yummmm.

                              guacomole dip

                              I make a wonderful guacomole dip
                              made one today in fact and my better half shares with me so I dont eat too much..

                              2 ripe avacodos-mashed
                              salt and pepper and garlic salt to taste
                              1/2 tsp lemon juice
                              1/4 tomatoe and I squeeze it on top of the dip to get the tomatoe flavor and then chop the rest and add to dip
                              1 slice of onion, chopped
                              2 t accent
                              mix all together and enjoy
