Mash up your yolks, add mayo, garlic, cayenne, spicy mustard, or whatever else you think would be good, and there you go! :nod

I make up the 'sauce' separately, then add to the yolks until I get the consistency I want.

Start with mayo and mustard, then add the spices you like, to taste. I just use Splenda, salt, and pepper.

Put your eggs in a large pot, covered with water at least an inch over the top. Bring to a boil on the stove, then remove from heat. Let set covered for 15 minutes, then plunge the eggs in an ice bath.

You can mash yolks with a pastry blender or a fork or a food processor. Add the 'sauce' until you get them the way you like them, then either pipe into the shells or use a teaspoon to drop the mixture in.

not really traditional deviled eggs....but yummy all the same.

mix the yolks with a bit of mayo and a half a teaspoon of curry powder....seriously yum!

            Vinegar adds oomph!

I love it, it's the way my mom makes it and I have continued the tradition.
Admitting...on April 2010 I have been eating low carb for almost 7 years and the lowest I got to was 145. These last couple of years though I got lazy, and over the course of time, gained back up to almost 170. I am back on induction, a week into it now on 4/22/10, doing excellent and seeing results. Once again, my weight goal is 140.

I just don't have the heart to change the stats below, except I am NOW 46yrs.

I boil my eggs for 4 minutes, then turn off the heat and let them sit until my lazy bum feels like cooling them down and peeling them. I make mine with mayo, garlic, mustard and LOTS of paprika. Horseradish is good too.

Curried deviled eggs are the BEST! the curry powder *does* have carbs tho, so count them in!
