    Is their anyone that has this recipe? I heard about it from a low carb chat.

    Just do a search in the food section for it, or for "fauxtatoes" and you'll find several posts with recipes.

        They don't taste like real mashed potatoes, they definately have a cauliflower taste and texture, they aren't bad however.

          they are awesome dont forget the onion and bacon.
          start weight 227.5 34% bodyfat as of jan 10 2004 as of jan 17 222.5 31% bodyfat lost 1 inch around the waist. goal intill i can see my abs mybe some around 205. that what it took 2yrs ago. as of jan24 218 30% bodyfat 1 inch every where.

            You surely have tried these by now. I LOVE them. Can use fresh or frozen cauliflower..cook until very soft and drain, can also steam in microwave..drain well. Put into food processor with a small cream cheese, salt/pepper, grated mild cheddar cheese and a couple of spoonfulls of sour cream..YUMMY.....because they trick the eye, these also trick the taste buds. I never want real mashed potatoes anymore. :icondance

              Learn from my mistake: Cook the heck out of the cauliflower and drain very well.

                I had some leftover broccoli from a party along with cauliflower that I threw into my fauxtatoes. Here's my recipe:

                2 tablespoons heavy cream
                1 tablespoon cream cheese
                1 tablespoon shredded cheddar
                1 cup broccoli florets
                .5 cup cauliflower (all I had left)

                Boil veggies for 20 minutes and drain. Blend with remaining ingredients in processor or blender; nuke for 30 seconds if it's not hot enough.

                Approx. 3-4 servings

                  Go to foodnetwork.com and check the "low carb and lovin it" section...there's the recipe for that somewhere along with some other great ones. I love watching that show, gives me great ideas. ensive

                      Can you use something besides a food processor? I don't have one of those.

                        I just use the potato masher. Probably has a little more "texture" than if done in processor but I like it that way.

                          If you don't like the taste of cauliflower, try these recipes with turnips. I boil them like potatoes and then mash, add cream cheese, bacon and sour cream. It is delish!!!
