Here are a few I have gathered...sorry I can't give credit and I have not tried any of them.
2 lb lean round steak with fat trimmed
2 green peppers, cliced thin
2 onions, sliced
1 cup beef broth
2 Tbsp soy sauce
1 tsp Worchestershire sauce
1 clove garlic, minced.
Cut the steak into serving size pieces. Put veggies in bottom of crockpot,
put steak on top in single layer. Pour rest of ingredients over top. Cover
and cook on low fro 8-10 hours or on high for 4 hours
EASY CROCK POT ROAST

1/4 cup mayonnaise
1 envelope onion soup mix
• Rub mayonnaise over surface of entire roast. Put
onion soup mix in crock-pot and place roast on top. Cook
on low 7-9 hours. No additional water is needed in crock-pot,
or any other seasonings. Serve. Makes an excellent

lol...Pau you make me smile. A crockpot is a round or oval ceramic dish any where from 2 quarts to 6 quarts mabey 8 quarts deep that has a glass lid and sets in a metal dish the same shape(like a glove) and it has a heating element in it and it cooks like a miniature oven. Here is a URL for a site that has crock pots and some ideas of what you can cook in them.

I make what I call 'Jambalaya", but I haven't a clue whether it's anything like real jambalaya...lol
I cook with the 'a little o' this, a little o' that' method, so quantities are approximate.
2 chicken breasts
hot or mild (depends on your taste) Italian sausage
Cut into bite size pieces and brown in a frying pan...transfer to crock pot.
Add one large can of tomatos and whichever spices you enjoy.
I will add oregano, red pepper flakes, parsley, garlic powder (or minced garlic)
Roughly chop up veggies...I use red and green peppers, kale, onion, and zucchini and soften them slightly in the same frying pan you did the meat. Add a little water so it steams the veggies and also loosens up any brown bits off the bottom of the pan. Transfer everything to the crock pot and cook on low for the day.

CROCKPOT CHICKEN & SAUSAGE
1 tablespoon Oil -- olive
4 Garlic cloves -- crushed
1 medium Onions -- chopped
1 Pepper, red -- chopped
1 Pepper, green -- chopped
1 small Zucchini -- chopped
1 can Mushrooms
1 can Tomatoes, italian -- stewed
1 can Tomato Paste (6oz)
1/4 pound Sausage -- hot
2 Chicken breasts 1 teaspoon Italian Seasoning Pepper, red, flaked -- optional In crockpot combine all ingredients together. Add the sausage then top with the chicken breasts. Cover and cook on low setting 6-8 hrs.

CROCKPOT CREAMY CHICKEN AND PEPPERS ENCHILADA
4 lbs boneless, skinless chicken breasts
1 can enchilada sauce (lowest carb count)
4.5 oz can chopped green chilies, undrained
1 sm. red pepper, chopped
1 sm. green pepper, chopped
2 8 oz pkgs cream cheese, cut into cubes and softened
4 c shredded cheddar cheese
Place chicken, enchilada sauce and chilies in large slow cooker.
Cover and cook on low heat setting 8-10 hours. Stir in bell peppers,
cream
cheese and cheddar cheese.
Cover and cook on Low about 30 minutes, stirring once or twice till
cheeses are melted.
Serves 4. Carbs per serving: 6g

1 bottle Michelob ultra beer
Place roast, chopped garlic cloves in crock pot with jalapeño peppers and the chopped bunch of cilantro. Season to taste with salt and black pepper. Pour in beer.
Cook on high 4 to 6 hours until fork tender. Remove meat; shred.
This recipe yields 8 servings; 5 carb grams per serving.
Comments: To serve, pile the hot meat on a plate. Serve low carb tortillas, and choose your favorites from; chopped tomatoes, diced onion, shredded cheese, sour cream, lettuce and fresh cilantro.

This is how I like to cook a cheap roast:
I place the roast in a crock pot. I add a can
of green chilies and some mexican type spices.
I try not to use the prepackaged ones, cause
all the ones I've seen have MSG. I'll add stuff
like garlic, cayenne pepper, etc.
Then I just cook it all day. By the time I get home
it's falling apart. I shred it up and serve with
lettuce, shredded cheddar, jalapenos, sour cream, etc.

Chili – from Debbie Cusick
1 lb. ground beef, browned and drained
2-3 hot dogs cut into 1-inch chunks (I use sugar and nitrate free organic hot
dogs)
1 lb. fresh mushrooms, cut up
1/2 cup green peppers, cut up
1 small jar of tomato salsa (mild to hot as preferred)
2 tsp. to 2 tbsp. chili powder (adjust for desired hotness)
1 tbsp. fresh ground garlic
Combine everything in a large bowl, then dump into the crockpot and cook on low
for 8-11 hours, or high for about 3 hours.
Serve with sour cream, shredded cheese and guacamole if desired.

1 lb. beef stew meat; trimmed
6 oz tomato paste
1 cup chopped onions; 2 medium

1 tsp. ground cumin
1/2 tsp. dried oregano; crushed
Trim the beef of all visible fat. Cut into 1/2 inch cubes. Place meat in
crockpot
and stir in tomato paste to completely coat meat. Add the remaining ingredients
and stir to blend. DO NOT add any additional liquid. Cover and cook for 12 hours
on LOW heat. When done, you can skim the fat from surface and discard. YIELD: 4

POT ROAST
Slow cook pot roast in crockpot or on stove top. On stove top, season roast as
desired, cover roast with water, and simmer (very slow boil) roast for 4 - 5
hours. (Cover pot with tight fitting lid.) Before serving, remove roast to
serving dish. In a separate pot, heat a can of beef gravy (15 carbs) and add
1/2
- 3/4 can of water that the beef was cooked in. This makes a very rich gravy
with about 2 carbs per 1/4 cup. Pour gravy over pot rost and serve.
In crock pot, no need to add water. Slow cook roast for 10-12 hours. For
gravy,
heat a can of gravy. Add a couple of teaspoons of liquid from crockpot, 1/2 -
3/4 can of water, and 1 beef boullion (sp) cube. The liquid in the crockpot is
mostly fat, so I don't use much of that to dilute the gravy. Pour gravy over
pot
roast and serve.

Maguire’s Pot Roast
I do pot roasts (and pork roasts too!) in the crockpot. We had pot roast for
dinner last night as a matter of fact
What I usually do is put about 1/2 an
onion, 2-3 chopped garlic cloves, and 3-4 chopped celery stalks in the bottom of
the crockpot and top that with about 2 cups of boiling water (not necessary to
use hot water, but it sort of kick starts the cooking process) and my salt,
pepper, and other seasonings.
Then I put in my roast that has been seared on all sides in a red-hot skillet.
I
don't always sear the meat, but when I do I get a much juicier roast. My
crockpot has an "auto" setting which is high heat for 4-5 hours then low for the
rest of the cooking time, so that's what I use. When I take the meat out of the
pot to "rest" before carving, I add a couple of tablespoons of flax meal to the
pot (NotStarch or some other thickener would probably work well too if you
dislike the flax flavour although it is VERY mild when used like this). I like
to
use an immersion blender to puree the onions, etc. into the gravy. I taste the
gravy for seasoning, add pepper, etc. and then let the gravy cook for another 5
minutes or so in the crockpot before serving. Good luck!

Trina’s Beef Chili
Cube 2 lbs. stew beef. Brown in butter, toss into crockpot. Cook 1 medium to
large onion (diced) in drippings until translucent; add about 3 cloves (minced)
garlic for about 2 minutes. Toss into crockpot. Chop 1 red pepper, sauté
briefly till begins so slightly soften. Toss into crockpot.
Add 3 T high quality "sweet" chili, 2 T cumin, 1 T salt, 1 T Italian seasoning.
If you like hot chili, add 1 or 2 tsp. hot pepper sauce (but be careful; might
be
more prudent to add at the end). Put half a small can of crushed tomatoes in,
pour in 2 1/2 cups water and blend.
Cook in crockpot on low about 8-10 hours, till meat falls apart. Remove lid,
cook on high (slight simmer), about an hour till thickens. Serve with sour
cream
to fold in, onion and cheese to sprinkle on top.
This recipe uses stew meat which breaks down into nice stringy bits which does
create a nice thick chili. I believe it is similar to authentic Texan chile
which some claim has no beans and is made with stew meat not burger.

*Garlic Dijon Dump Chicken (Soopermom)
2 cloves garlic, minced
4 T. Dijon mustard
2 T. lime juice
1 1/2 lb. chicken pieces
Place all ingred in freezer bag (1 gallon). Lay flat in freezer.
Thaw & cook: Take bag out of freezer night before, make sure baggie
is closed. Place in bottom of fridge laying flat. Preheat oven
350*. Empty bag into large baking dish and bake until juices run
clear (45-60 min. for chicken pieces or 20-30 min. for boneless
breasts). 6 servings: 2 g. carbs each.
Note: I had frozen chicken and thawed it the night before without
thinking (can't refreeze formerly frozen and thawed chicken), so when
I put assembled this recipe, I had to put it in the fridge instead of
freezing for later. Oh, well, it will marinate nicely, and we'll
cook it tomorrow night for dinner.
What I learned from my session (besides don't thaw frozen chicken
that you want to use to freeze for a recipe): as far as I can tell,
all the recipes came out good, the real test will be thawing and
reheating. I put the taco chicken in the crock pot first to get
cooking, and then assembled the other recipes one at a time. I saved
a lot of time by chopping all the onions, peppers, mushrooms, and
celery at once and just taking out what I needed for each recipe.
The next time I do batch cooking, I want to use all the same meat
(besides being a time saver, this will be a good way to use bulk meat
found on sale) and do several different recipes for that meat.

From: Celebrate Low Carb
2 pounds ground beef
1 heaping teaspoon minced garlic (about 1 large clove,
fresh)
1 tablespoon red pepper flakes
1 14.5-ounce can diced tomatoes with green chilies
1 15-ounce can no sugar added tomato sauce
1 8-ounce can no sugar added roasted garlic tomato sauce
1 tablespoon cayenne pepper (or to taste)
1 tablespoon onion powder
1 teaspoon paprika
1/8 teaspoon cinnamon
1/8 teaspoon nutmeg
sour cream (optional)
shredded cheddar cheese (optional)
Brown the ground beef with the garlic and red pepper flakes;
drain
thoroughly. Combine the browned meat/spices with all the
remaining
ingredients except the sour cream and shredded cheese. Place
mixture in a
crockpot and cook on high 3-4 hours or low 6-8 hours. Serve
hot,
garnished
with dollops of sour cream and sprinkles of cheddar cheese, if
desired.
Freezes well for a quick lunch or snack.
Makes 12 1-cup servings @ approximately 5 carbs/serving
Carb count does not include the sour cream and shredded cheddar
cheese.

Raspberry/Onion Chicken
4-6 oz boneless skinless chicken breasts
1 can raspberry flavor diet soda pop with Splenda
1 env dry onion soup mix
Place chicken breasts on the bottom of your crock pot. Sprinkle
onion soup mix over the top. Layer until the chicken breasts are
all in the crock pot, making sure you have enough soup mix so you
have a layer on top. Open can of soda pop and pour it over. Cook
all day or 8-10 hours on low.
Nutritional information: There are 20 grams of carbohydrates in
the soup mix. Since there are none in the chicken or soda pop,
you can divide the 20 between how many servings you will get. 2 ix
of chicken will give you 4 servings. The soup has no fat either,
so this would also be low fat.

rolls with remaining cheese mixture, soup, and enchilada sauce. Cover and

6 ounces cream cheese -- cut in cubes

Wash chicken and pat dry. Brush with butter. Sprinkle with salt and
pepper. Place in crock pot. Sprinkle with dry salad mix. Cover and cook
on low for 5 to 6 hours.
About 3/4 hour before serving, mix soup, cream cheese, wine, and onion in
small saucepan. Cook until smooth. Pour over chicken in pot. Cover and
cook for 30 minutes.

4 to 6 pounds beef roast
2 14 oz. cans Mexican stewed tomatoes
1 tablespoon dried minced onion

1 teaspoon black pepper
1 teaspoon salt
1 tablespoon parsley
2 tablespoons oregano
Cut all visible fat from meat. Cut into 3 or 4 large pieces.
Put all ingredients except beef in food processor, if you have one, and
puree
into a thick liquid. Otherwise, just add all ingredients except beef to
crock pot and stir. Add beef. Cover and cook on HIGH for 4 to 5 hours.
Remove meat and break into chunks or shred.
Serve with shredded lettuce, chopped tomatoes, cheddar cheese and sour cream
if desired. If you can afford the extra carbs, use the low-carb tortillas
to make actual burritos. Makes 4 servings

Dietary Fiber: 17 grams
Note: Carb count is a bit deceptive because you don't use all of the tomato
liquid in the burritos. Most of it is discarded after cooking, although my
husband cooked some on top of the stove to thicken it even more and made wet
burritos.

QUICK ONION POT ROAST
This roast needs no prior browning. Meat browns in the slow
cooker and forms a good brown gravy.
1 pkt onion soup mix.
3lb lean beef pot roast trim off any fat
3 Tbs. flour in 3Tbs water, mixed to a paste.
Sprinkle onion soup over the bottom of the crock pot. Add pot roast. Cover
and cook on LOW about 10 hrs. or 5 hrs. on HIGH. Pour accumulated juices
into a saucepan; skim off fat. Add flour-water paste and bring to the boil,
stirring constantly until thickened. Serve gravy over sliced meat.

"BARBECUED" POT ROAST
1 tsp. salt
2lb lean pot roast
1/2 cup tomato paste
2 Tb. whole black peppercorns
1 small onion, chopped
1 tsp. Worcestershire sauce
Sprinkle salt over the roast and place in crock pot. Spread tomato paste
over meat; imbed peppercorns into paste; top with onions and Worcestershire
sauce. Cover and cook on LOW 8-10 hrs. Serve meat with accumulated gravy.

2 cups chicken broth
2 cups water
sliced green onions -- for garnish
In slow cooker, combine all ingredients except green onions.
Cover; cook on low 7 to 8 hours. Ladle into individual bowls.
Garnish with green onion slices. Makes 7 to 8 servings.

You can adjust the red pepper flakes to make it more spicy...I usually
increase this to almost a tsp...but we like spicy soup! Also, I often add

I've made this in the crockpot and just on the stovetop in a saucepan until
it tasted right.
You can double or triple this easily...and it freezes just fine.
