  • Chicken Thighs

:help I have a whole bag of chicken thighs and want to do something other than just "cook" them. I want something that I will enjoy as well as my family (don't want to have to cook a seperate meal tonight for once) who is not low carbing. Any ideas out there for someone on a budget (meaning no expensive recipes please lol) Thanks!

Well, tons of casseroles work well with chicken thighs (are they boneless ?) or you could also just make up or buy a low-carb barbecue sauce and pour that over them.

Have you looked in the chicken section of our recipe area?

Even if the recipes call for breasts they often work very well with thighs instead.

I just made my daughter's favorite chicken and it's so simple. Just mix some crushed garlic, pepper, garlic salt and paprika with some mayo and spread on the chicken, then bake until done! Hope you like it!

And I was going to suggest MY daughter's favorite. Use some low carb (Carb Options, for example) or make your own Italian dressing. Put the chicken in a ziploc bag, pour some Italian dressing over it, marinate it for a few hours, then grill or bake. My daughter love's it!

Thighs are my favorite cut (either boneless or with bone in) ... because they are so cheap! And they are small in portion size, and I have little kiddos around. (I can eat two or three and think I just FEASTED on chicken!).

I use any chicken recipe: bone in are great on the grill, boneless are great sauteed or baked. I think the others have given you great suggestions above.

A note on pork rinds: I now have a cannister in my kitchen with crushed pork rinds. Plain flavored, of course. I use it for breading / bread crumbs and it has opened up a lot of substitutions for some of our favorite recipes. And I don't notice any difference in flavor. (Cannot stand to eat the darn things as a snack, but as an ingredient they are great!).

              Re: Chicken Thighs

Are they boneless? IS take my boneless thighs, season really well, put a slice or two of jalapeno pepper in the middle and roll up, rap with bacon insert toothpick.

Barbaque till done (don't over cook) - put in pan - baste with Kraft Carbwell BQ Sauce - Cover and let sauce soak in. These are wonderful.
