    Thanks Megs! All great ideas....and I am going to use most of them when I get out of induction and onto the dairy rung!! Sour cream and salsa...already love it!! I guess one thing about eating this 1 T a day is that I will be able to see if it stalls me at this amount...I sure hope not!

      Hey Not2late,
      made a half order of your Simple beef stroganoff...with only 1 T of sour cream...LOL...and it was really good. My only complaint is that I would have loved to double the sauce so that the meat was good and covered. I will be using the sauce thing again...because the mushrooms and onions....YYYYUUUUMMMMYY....tasted so good with it on...I might have found a favorite new vegie dish. Thanks!

        This is my favorite recipe using sour cream I made this around the holidays with turkey instead of chicken and it was sooooo good. I also made it once with green beans but I prefer the broccoli. this will make a small batch I at least double this so I will have leftovers for my lunch. I hope you give it a try. P.s I didn't have the wine so I just left it out and it was still good maybe I even saved a carb? LOL

        Chicken Divan (baked) - 2.8 net carbs

        Recipe By :
        Serving Size : 2 Preparation Time 00
        Categories :

        Amount Measure Ingredient -- Preparation Method
        -------- ------------ --------------------------------
        1/2 cup cooked broccoli
        1/2 cup mayonnaise
        1/2 cup sour cream
        2 tablespoons white wine
        1 tablespoon chicken stock
        1/2 teaspoon dry mustard
        1/4 teaspoon curry powder
        12 ounces chicken breast - cut into cubes
        parmesan cheese

        Mix all ingredients except broccoli and chicken.

        Stir in chicken, then broccoli. Spoon into 13x9" pan and bake at 350 for 25 minutes.

          Thanks Ana...I will use the broccoli too. And skip the wine. As soon as I get to the dairy rung I am trying this one too...sounds delish!!!! You know before Atkins I never took the time to cook like this. DH is a plain meat and potatoes man and the kids are picky so it was just easier to eat that way....but I am quite enjoying this.
