    Anyone have an induction friendly recipe for this? I searched in here and haven't seen one as yet. =)

    What type of stuffed peppers are you looking for, stuffed bell, jalepeno poppers, chile rellenos?

      Sorry about the slow reply... I went ahead and just modified my own recipe, should have asked earlier. They turned out beautifully though.

          2 servings, haven't calculated the carbs.

          1 lb Ground Turkey

          1 t. Italian seasoning

          2 T Ketch-A-Tomato

          1 stalk Celery, finely diced

          1 T dried onion

          1 T bacon bits

          1/2 C mushrooms, diced

          1 T chopped garlic

          Minced Peppers from pepper tops

          2 large green peppers

          2 T Ketch-A-Tomato

          You don't have to cook any of the ingredients first if you don't want to, but I'm on a tight schedule so meals have to be done quickly.

          Preheat oven to 350.

          Cut tops off of peppers, remove seeds and white pith inside and set to the side.

          Brown the meat with the italian seasoning, bacon bits, onion and garlic, no need to drain as it's turkey. Set it aside and coat the saute pan with olive oil, use however much you want... add remaining veggies and cook to desired tenderness (will get softer as you bake later). Put the turkey mixture back in and the catsup and reheat all the ingredients.

          Stuff the peppers til mounded nicely, and place in a pre-oiled baking dish.

          Take the remaining 2 T catsup and put in a small cup, add about 1/2 C hot water and stir, then pour over peppers in baking dish. Bake for 30 minutes, or until peppers are browned and softened slightly.


          This can also be used with other veggies, parmesan in the stuffing, mozz on top, etc.
