    My Curves group is having their 2 year Birthday Party. Everyone is bringing something low carb for the group to eat. I need some suggestions as to what to make to bring. Any suggestions or recipes?

    Greek Salad

    2 romaine lettuce hearts, sliced into bite sized pieces (about 6-8 cups)
    1/2 cup fresh parsley
    1/2 cup fresh mint leaves
    1/2 onion, sliced
    1 cucumber, peeled, seeded and sliced
    4 tomatoes, seeded and sliced into wedges
    1 jar of roasted red pepper, drained, rinsed and sliced
    8 ounces feta cheese crumbled
    1/2 cup black olives (kalamata or oil-cured are the best for this)

    Dressing:
    3 tablespoons red wine vinegar
    1 tablespoon lemon juice
    1 minced garlic clove
    1 teaspoon salt
    1/2 teaspoon black pepper
    1 teaspoon oregano
    6 tablespoons oil

    In a jar, mix the dressing ingredients and set aside.10 minutes before serving the salad, soak the onion slices in the dressing.

    In a large salad bowl, combine the lettuce, red pepper, tomatoes, cucumbers with the salad dressing. Tossing lightly. Add the olives and feta and toss to combine. Serve immediately.

    I frequently bring this salad to potlucks and cookouts. Before I leave my home, I combine the onions and the dressing and put that into a jar. I also put the cucumbers, tomatoes, olives and red peppers into a ziploc bag. The romaine lettuce, parsley and mint leaves, I put into another ziploc bag. The amount of dressing doesn't appear like it will dress the salad, but it does. If you choose you can make extra for your guest to add if they need to, but I find that's not necessary.

          This recipe is similar to one I make alot, I don't have it with me so this as as close as I can get. It is delicious!

          Hot Crab Dip

          1/2 pound (8 ounces) Maryland regular crabmeat
          1 package (8 ounces) cream cheese, softened
          1/2 cup sour cream
          2 tablespoons mayonnaise
          1 tablespoon lemon juice
          1-1/4 teaspoons Worcestershire sauce
          1/2 teaspoon dry mustard
          1 tablespoon milk (substitue cream!)
          1/4 cup cheddar cheese, grated
          Crab Spice for garnish


          1. Instructions
          2. Remove cartilage from crabmeat.
          3. In a large bowl, mix cream cheese, sour cream, salad dressing, lemon juice, Worcestershire sauce, mustard and garlic salt until smooth.
          4. Add enough milk to make mixture creamy. Sir in 2 tablespoons of grated cheese.
          5. Fold crabmeat into cream cheese mixture.
          6. Pour into greased 1-quart casserole.
          7. Top with remaining cheese.
          8. Bake at 325 degrees Farenheit until mixture is bubbly and browned on top, about 30 minutes.
          9. Serve with crackers. Makes about 4 cups dip.
          Serve with vegetables for dipping like celery or your favorite low carb veggie.

              Oh, this is even easier....

              Try out this idea. Do a veggie platter: carrot sticks, celery sticks, cauliflower/broccoli florets, zucchini sticks or rounds, radishes, jicama sticks, etc. You can even buy the veggies at the salad bar in most grocery stores if you don't feel like cutting them yourself. Then make at least 3 different dips: blue cheese, crab, onion.
