    I was going to make this bread for my daughter who we think has a gluten allergy and a lactose allergy. I don't know what rice polish is or what it does, and can I trade the rice bran for flaxmeal? The milk will be traded for lactose free milk. Thanks for any input

    1 rounded c. rice flour
    1/2 c. rice polish
    2 tbsp. butter
    1/4 c. rice bran
    1/2 tsp. salt
    1/2 c. milk
    1 tsp. sugar or honey
    1 c. finely grated carrot
    3 tsp. baking powder
    2 eggs, separated (beat whites stiff)
    Sift flour, rice polish, bran, salt, sugar and baking powder 3 times. Melt butter. Put in small bowl with 1/2 milk and egg yolks. Mix well. Put into flour mix and beat well.

    Add finely grated raw carrots and mix well. fold in egg whites and blend. Bake in greased bread pan, medium size, for 55 to 65 minutes at 350 degrees.

    Rice flour is awesome for crackers because it has so little fiber and "body", but does not perform so well in bread for the same reason. Thus the addition of the rice bran.

    Rice "polish" is basically rice bran made from the outer hull of rice. I don't know why it is listed as a separate ingredient, unless they want you to use a much coarser product that is basically just the ground up rice hulls.

    You'll probably do reasonably okay trading some of the rice bran for flax meal, but I'm not sure. Is oat bran an acceptable option or not?

      Oats are a debate issue. Some nutritionists say yes others no. I broke down and spent 7 dollars on a little loaf of rice bread for her to try while I work on the recipe.

        Go ahead and swap some (or all) of the rice bran for flax meal and let us know how it works.
