  • Baked Mock Danish?

I just tried the microwaved mock danish...it was delicious! My youngest taste tester loved his too and it got him to eat an EGG!

However, the appearance left something to be desired...at least from my microwave.

I wonder, has anyone tried to bake them?

Hmmm... I have not thought of that. I wonder if you could bake it. I'm interested in reading the responses to this thread too. You're right though, the look of the microwaved one looks pretty nasty.

By the way, Kim in Tulsa, I like your signature. :wave

My attempt at baking them wasn't a great success - they toughened - but you might try on fairly low heat and see what happens.

I read on another board that if you micro on a low temp for longer it works better. The pic they had of it looked exactly like a danish from the bakery. I even copied the recipe to try it looked so good!

Could you post the recipe, cooking time & temp etc? I'd like to try it.

            Thanks!

This is from the other board, sorry the pic didn't come through:

              Mock Danish
I remember when I first heard of everyone making this and raving about it, I couldn't figure out why mine was like sweet scrambled eggs. Tasted nice but looking like a danish? Nope.

Then some nice lady remembered 1) to post a photo of it and 2) to tell me to cook it on LOW in the microwave, not HIGH. Voila! It worked and here's the proof.

I was hungry tonight but not in the mood for a meal so I made this.

2 ounce cream cheese (a 1 inch 'slice' out of an 8 ounce tub)
              2 large eggs
1 tbs Splenda (I used a liquid sweetener)
              1 tsp vanilla extract

Warm the cheese in a microwave until soft. Mix a little so it's smooth and then whisk in the eggs, vanilla and sweetener.

Cook on LOW for about 3 minutes. Mine puffed up with a hollow in the middle so it seemed natural to pop in a tsp sugar free strawberry preserves. I cooked it on low for 1 more minute.

              Done! Served with light cream.

I showed the bowl I cooked it in too - it make such a nice filling treat.(the bowl looked cone shaped)

I tried the Mock Danish for lunch over the week-end. I wanted to do one at work for breakfast today, but alas, DH used up all of the vanilla extract. I grabbed the coconut extract from the pantry cupboard and OMG!!!!! It was amazing!!!!! It was tremendous!!!!
                Just a bit excited.... :joy

Try it with straberry extract. I used to make clouds with that intead of vanilla. I stopped because I moved and dumped them and just never got around to it again, bt sice this has no butter, like clouds does, it probably tastes better anyway. Strawberry cheesecake tasting...

I haven't tried to bake it, but I pan fried it. It tastes great, but it is difficult to keep it in one piece.
