  • Beef Mince.

    Hello All.

    I am looking for recipe suggestions for beef mince. I am getting bored now of homemade beefburgers, and would like other ideas for atkins related food.

    It never ceases to amaze me of how easy and how effective this ***diet*** is!!




    I have since re-gained a bit of weight, but that is soon to be coming off again!

    Boil a head of cabbage until tender. Drain well and chop into bite sized pieces. Fry up some bacon and ground beef (that's beef mince in your country). Drain most but not all of the fat. Toss in a good chunk of the cabbage and heat it up in the fat. Add the drained beef and crumbled bacon back in. Delicious.

      Fry off the meat.....slice mushrooms and aubergine put in a dish in layers. Pour over some chopped tomate and lots of cheese......put in oven until the cheese is golden! Yum....Fake lasagne....

        Cut out the mushrooms and the cheese and I'm in...Lots of onion and chili, though

          Fry off half an onion and put in the beef mince. Let it fry for half a minute and add half a cup of coffee (black). Let it boil for until half the coffee is gone and add chopped tomato and chilies. To finish it, add 25 grams of dark chocolate.

              CURRIED MEATBALLS AND FAUX RICE

              1 pound ground beef

              1/2 cup sugar free tomato sauce

              1/2 teaspoon salt

              1/2 small onion, chopped

              1 cup cauli rice*

              1/8 teaspoon ginger

              1/4 cup pork rind crumbs

              3/4 teaspoon curry powder

              2 tablespoons oil

              2 cups beef broth

              Mix beef, crumbs, tomato sauce, curry and salt. Shape by teaspoons into balls. Brown meatballs in oil, push to one side. Sauté onion about 5 minutes. Stir in broth, cauli rice, and ginger. Bring to boil, stir, cover and simmer for 15 minutes.

              *Cauli rice using a food processor or a cheese grater, grate 1/2 head of cauliflower steam and add butter or add to any recipe calling for rice.

                EASY BEEF ONE DISH MEAL

                From alt.support.diet.low-carb

                1 pound ground beef

                1/2 white onion

                1/2 head cabbage, cooked and chunked

                1 small can mushrooms

                1 cup Ragu Double Cheddar Cheese sauce

                Brown ground beef and onions. Drain well. Return to pan and sauté with cabbage and mushrooms. Add 1 cup sauce, cover, and simmer for 10-15 minutes. 4 large portions with 8 grams carb per serving.

                  Italian Zucchini Beef (low carb)

                  3/4 lb ground beef
                  1 onion, finely chopped
                  4 med zucchini, sliced
                  1 small clove garlic, minced
                  1/4 lb sliced mushrooms
                  salt and oregano to taste
                  4 eggs, beaten
                  parmesan cheese

                  Brown meat and onion. Add zucchini, garlic, and mushrooms. Cook for 2 min. Stir in oregano and salt to taste. Add eggs and stir gently til done. Top with parmesan cheese.

                    razorback pie
                    1lb hamburger
                    1/2 cup pork skin crumbs
                    1/2 small onion chopped
                    2 green onions chopped
                    3 tablespoons sour cream
                    1 tablespoon cottage cheese
                    4 oz. mozz cheese
                    4 oz. cheddar cheese
                    1 egg
                    salt,pepper,Tony Chachere's creole seasoning to taste
                    1/2 bag frozen cauliflower
                    cook cauliflower for 7 min in the microwave with a little water...drain the water off and mash em up. Mix all the other items in and spread into a small casserole dish. Bake @ 350 degrees for 60 min.(might want to check it @ 45 min).

                      Tuscan Parmesan Patties

                      1 1/2 lb Ground beef round
                      3 Cloves garlic; crushed
                      1/2 tsp Salt
                      1/4 tsp Coarsely ground pepper
                      1 c Parmesan cheese; grated
                      1/3 c Chopped parsley
                      1 tbsp Olive oil
                      1 tbsp Butter
                      1/3 c Chopped parsley
                      Lemon wedges

                      Note: You must use fresh parsley, not the dried stuff and you absolutely must use real Parmesan cheese, not the stuff in the green shaker can.


                      Mix meat-mixture ingredients (first 6) until well blended. Shape into twelve 1 1/4-inch thick patties. Let stand 15 minutes. Heat oil and butter in a large heavy nonstick skillet over medium-high heat. Add patties and cook until well browned on both sides and no longer pink in centers, about 5 minutes. Sprinkle with remaining parsley. Serve with lemon wedges to squeeze over the patties.

                      2 Patties have about 1g carbs.

                        Cauliflower/Ground beef Casserole

                        2 servings

                        1/2 head cauliflower (1 bag frozen), cooked until fork tender

                        1 lb ground meat (beef, chicken, turkey)

                        1 or 2 green onions

                        1 clove garlic, crushed, chopped

                        Mayo Sour cream

                        Shredded cheese of choice Salt, pepper, onion powder Brown meat with onions and garlic. Drain grease. Mash cauliflower with fork and add to meat mixture. Add enough mayo and sour cream to desired consistency. Add handful of shredded cheese and seasonings.

                          Ground Beef Jerky, Smoked
                          1/2 cup soy sauce; can use light
                          1 tbs allspice
                          4 tbs Splenda, bulk
                          2 tsp ginger root; grated
                          1 clove garlic; minced
                          1 tbs liquid smoke; hickory or mesquite
                          2 lb ground beef, ex-ex ln (7%); leanest poss.

                          Press ground beef into flat strips 5 inches long by 1-1/2 wide and
                          1/4 inch thick. Place one layer of ground beef strips in dish for marinating.
                          Mix marinade ingredients together in a bowl. After well mixed, sprinkle
                          marinade sauce over meat, soaking well. Turn meat over and sprinkle
                          with sauce. Add layers of ground beef strips to marinating dish and repeat
                          sprinkling of marinade. Pour remaining marinade sauce over meat.
                          Cover tightly and let marinate in refrigerator for 6 to 12 hours. rotate
                          layers of meat occasionally. Place in dehydrator until dry. While meat is
                          drying, blot excess oil with paper towel.

                            there you go Rich just a few ideas for you. Also I like to stir fry ground beef with cabbage or bok choy. for a very quick dinner.
