What types of things do you like? What is your lunch situation ? (do you have to pack it and eat it at work/school, or are you home during the day?) You can also browse the recipe forums for some great ideas.

I'm the taco salad queen. I mix up a large batch of seasoned ground beef, then I pack it and some lettuce separately. When I'm ready for lunch, I nuke the beef and put it on top of the salad, which I then top with grated cheese and a little bit of ranch or bleu cheese salad dressing.125/119/110

some suggestions
curried chicken salad (plain chicken or shrimp salad with as much curry as you like)
bring fresh lettuce to wrap it
Or try it with chile, cumin and lime for a mexican salad
I also will bring ceviche it is marinated fish in lime onion hot pepper (I use habenero) and diced tomato
fresh home made salsa with shrimp in it
split a red bell pepper and stuff it with egg/tuna or chicken salad when I did this one day people started asking for bites!
left overs from the night before make enough of whatever and put it in a container when you are serving yourself...seems obvious but some of us are so busy we forget the obvious!
frittata I will make a frittata and slice it up then bring it for lunch and have it for breakfast (I have a three day rule on leftovers if they are not gone in three days they are garbage)
packages of seaweed soup I go to the Asian markets and they have single serving packets of seaweed soup.(just seaweed, dried veggies and powdered broth 2 carbs counts as on serving of veggies and will keep you regular I promise!!!)..I will bring some frozen shrimp and toss them in at lunch then drizzle some sesame oil on top
