  • Help! Any good crock pot recipes!

    I have a very busy family, and it is very tempting some nights to grab a pizza on the way home from somebody's practice. It's much easier to stick to this WOE if we can come home to a low-carb supper that's been cooking all day in the crock pot.

    Any suggestions?

    You can do tons of things in a crock pot, chilis, roasts, stews, etc.

    Not all are low-carb, but most can be modified to be low-carb fairly easily.

      Aside from the usual meat culprits (like stewing beef) some veggies that go awesomely in a crockpot include:

      Turnips and their relatives, rutabaga and kohlrabi
      Celery
      Tomatoes (in moderation, count the carbs)
      Onions (same as above, just use enough for flavor)
      Fennel
      Jicama
      Kale
      Cauliflower
      Napa cabbage and regular cabbage

      If beans are on your rung of OWL, a small amount of black soy beans are fairly low carb and add a nice texture.

        I hate to cook during the week, so on weekends, I've been cooking pork roasts, turkey breasts, hams, etc. As soon as they've cooled enough to handle, I cut them into meal-sized pieces and freeze them separately. Then, during the week, I just pull out whatever I feel like, defrost it in the freezer, and I'm good to go.

        Perhaps a version of that would work for you and your family...

          One of the best things I have done with a crockpot lately:

          Onion Confit

          Cut up enough plain onions (dice roughly) to fill your crockpot to near the brim.

          Add 1 full stick butter

          Add the leaves of several sprigs worth of fresh thyme

          Add 3 tablespoons of dry sherry

          Salt and black pepper.

          Cover up and set your crock pot on high, leave like this for three to four hours. (works really well if you start it around 7/8/9 after you get home from work)

          Turn it down to low overnight.

          When you arrive back home from work the next day you should have a dark golden carmelized very strongly aromatic mass of onion in the crock pot. The taste is unlike any onion you have had before, the natural sweetness abounds, and this stuff is great to make french onion soup, or to top burgers or steaks, or use in almost any other method you could imagine.
