  • Peanut Butter Snacks

    Does anyone have any recipes for something I can make with peanut butter? I'm thinking like pb cookies, or cake, but every recipe I've found is loaded with splenda. I don't really want to sweeten the peanut butter. I've thought of experimenting and mixing peanut butter with eggs, and maybe some cream cheese, and then baking it. Anyone have a recipe for anything like this?

    STACEY'S PEANUT BUTTER CAKE
    6 tablespoons unsalted butter, softened (do not use salted butter)
    1 large egg
    1/4 cup plus 2 tablespoons natural peanut butter
    1 cup granular Splenda or 1/4 teaspoon Sweetzfree
    1 1/2 teaspoons vanilla extract
    1/2 cup plus 2 tablespoons Carb Countdown 2% milk *
    1 cup Carbquik
    1 teaspoon baking powder

    Glaze:
    1 ounce MiniCarb chocolate chips, scant 1/4 cup
    1 tablespoon butter
    1/4 cup heavy cream
    1/4 cup granular Splenda or 6 drops Sweetzfree

    Preheat oven to 350ยบ. Grease and flour a 6-cup bundt pan or 8x8" pan with Carbquik. Cream butter with an electric mixer. Add egg and mix until smooth. Mix in peanut butter and combine until fully incorporated. Mix Sweetzfree, vanilla and milk; set aside. Mix baking powder into Carbquik.

    Add dry ingredients and milk mixture to butter a little at a time beating after each addition. When batter is mixed well, spread in pan. Bake 20-25 minutes or until toothpick inserted in center comes out clean and cake is golden brown. Cool on rack before putting on glaze.

    For Glaze: In a small bowl combine chocolate chips, butter, heavy cream and Sweetzfree. Microwave on MEDIUM for 30 seconds or until butter is melted. Stir to completely melt chocolate. Place bowl in refrigerator and stir every once in a while until it's thick enough to pour over cake without running off too quickly.

    Makes 6-9 servings

    * Or, you can use half heavy cream and half water.

    With granular Splenda:
    Per 1/6 Recipe: 366 Calories; 31g Fat; 10g Protein; 21g Carbohydrate; 10g Dietary Fiber; 11g Net Carbs

    With liquid Splenda:
    Per 1/6 Recipe: 346 Calories; 31g Fat; 10g Protein; 16g Carbohydrate; 10g Dietary Fiber; 6g Net Carbs



    With granular Splenda:
    Per 1/9 Recipe: 244 Calories; 21g Fat; 7g Protein; 14g Carbohydrate; 7g Dietary Fiber; 7g Net Carbs

    With liquid Splenda:
    Per 1/9 Recipe: 231 Calories; 21g Fat; 7g Protein; 11g Carbohydrate; 7g Dietary Fiber; 4g Net Carbs
    Stacey posted this recipe as a bundt cake at Low Carb Friends. My friend, Nancy, cut the recipe in half and tweaked it a bit. Although it tastes ok, the peanut butter taste is kind of weak. Stacey did call for some peanut butter extract in place of part of the vanilla, so maybe that would perk the flavor up a little. As far as the glaze, I think it's a little too thin. I'd probably cut back on the cream to about a tablespoon or two and maybe add a little vanilla. The cake came out nice and moist with none of the typical Carbquik dryness. That's due to Nancy adding a bit more milk to the recipe. I'm not sure yet if I'd make this again without some further tweaking.

      I've been thinking of adding peanut butter to the typical low-carb french toast recipe. You could probably take out the Splenda from the recipe if you want. I just don't know how to add the peanut butter, if I should add it to the mix directly, or soften it with hot water then add it to the mix.

        Hrmmm... That peanut butter cake sounds good, if someone else would make it for me! What's "Carbquick", and am I allowed this if I'm only on the starchy veggie rung in OWL?

        I don't know about the french toast. I can't really do pork rinds in recipes. I thought I could, but then the uncontrollable gag reflex came back anytime I ate something with pork rinds in it.

        I guess I'll keep eating peanut butter by the spoonful until I can find just the right recipe!

            Me too..but my problem is I start with a tablespoon then cant stop...

            so i guess i'm a 'start at a tablespoon but end up eating 5 tablespoonfulls' girl

            I could sit and eat a bowl of pb.

                OOOOOhhh, great idea MoG!

                I tried peanut butter on flax bread, but it nearly made me gag. I made the flax bread (the quick, microwaveable kind), then toasted it in the toaster & spread it with peanut butter. But, the microwaved flax bread is very eggy, and all I could think about was that I was eating peanut butter and scrambled eggs. Hence, the gagging. But the flax crackers would be perfect. I've never made those, so I didn't think about that. Thanks!

                  I follow the spoonful method as well. To limit my quanity I us a little condiment size ramkin and put in my two tablespoons and then proceed to bliss.
