We have some fresh strawberries and I was wondering if anyone tried making shortcake out of the Atkins bake mix maybe adding some splenda to it?

Hmmmm... I imagine that bake mix would make a rather heavy and oppressive angel food cake... but you could always try and report back to us how it goes.

I have seen recipes via google search for low-carb chocolate angel food cake, but never for a plain. I suppose you could try to adapt one of those via making it vanilla flavored instead of chocolate (as I recall it used protein powder and egg whites for the primary bulking agents).

There's a recipe in DANDR, page 487, for Sunshine Cake. Looks good. Makes 10 servings. Total carbs per serving: 8 (count only 5.5 "digestible" carbs when doing Atkins); protein: 8 grams; fat: 17 grams; calories: 260.Susanne
