I always make my roux with flour and oil. I wonder if I can use xanthan gum? Or what else is there to use? Thank you.

Darker roux (the kind you use for gumbo) doesn't have much thickening ability. It's presence is primarily for flavor. Most of the thickening in gumbo comes from okra. Xanthan isn't going to provide the characteristic flavor of a brown or black roux.
If you can get your hands on it, I'd recommend carbquik. Just be careful as it browns very quickly.

I use ThickenThin not/Starch. It is a wonderful product. It can be found at health food stores or online @ www.expertfoods.com. I use it to make gravies and sauces. It's a little pricey; but you only have to use about half of what you would use for flour in a recipe. Its ALL Fiber. 0 net carbs. I also put some in an empty parmesan cheese container and shake it into recipes that turn out a little too runny. It's quite handy.
With the price of gas the way it is I just order online. Try it you'll like it.
