  • Thick creamy,economical soup

    I am looking for a thick, creamy soup using something that won't cost heaps to make that is low in carbs. In "the old days" before Atkins I use to love pea and ham soup and also use to make a lovely thick and creamy sweet potato soup, both of which made up heaps, but didn't cost too much.

    Got any suggestions???

    what about a broccoli/cauliflower/cheddar soup? With cream and butter..... it's yummy

      Try replacing pumpkin for the sweet potatoes. Pumpkin soup with cream is delious and with bits of ham it would probably be nice too.

        One of the best soup thickeners is pureed cauliflower. If you really want to be decadent, throw in some butter, cream and/or cheese. Puree that down along with the well cooked cauliflower and add this to your soup base. Do not overcook any kind of cheese; add it at the last minute.

            I just made cream of mushroom last night...used about 4 different kinds of mushrooms....came out so so yummy!!!
