I absolutely love coconut and I finally bought a bag of shredded unsweetened coconut...but I don't have any good recipes for it. If anyone has anything yummy made with coconut, I'd love the recipe! Thanks!

There was a recipe for coconut shrimp on the net before, but basically it was shrimp dipped in egg, then dredged in unsweetened coconut and fried.
I find that using a tablespoon or two of unsweetened coconut adds moisture to some low carb baking recipes, without adding an unpleasantly overpowering coconut flavor.

there was a recipe a few days ago for a coconut cookie if youuse the search feature you should be able to find it. I'd look but then i'd have to go eat a bag of coconut.
you can make macaroons with egg whites coconut and your preferred low carb sweetnerer
you can add a bit to your mock danish recipe for a nice danish

I have an awesome recipe for Coconut Custard Pudding... it's so good (especially if you LOVE coconut, like I do!)
1 can (14 oz) unsweetened coconut milk
1/2 cup heavy cream
3 egg yolks
1 tablespoon butterscotch extract OR 1 tsp coconut extract
(make note that if you use the coconut extract, it's only 1 tsp)
3 packets splenda
1. combine the coconut milk and the heavy cream in a saucepan. Bring to a boil, then reduce the heat to very low.
2. meanwhile, whisk together the egg yolks, butterscotch extract, and the splenda in a bowl.
3. stirring CONSTANTLY add the egg mixture to the cream mixture a little at a time until incorporated. Simmer over very low heat, stirring constantly, for 5 minutes. Transfer the saucepan to a large bowl or sink filled with cold water to cool for 5 minutes. Serve at room temperature or chilled. (you have to make sure when you are adding the egg mixture that you do it slow enough that you can stir it in and not have chunks of cooked egg in the custard - it's not as hard as it sounds)

That coconut custard pudding recipe was a 4 serving recipe... and in my book it says that Coconut is safe for the OWL phase - but it's not listed in the induction section...----> Dianna <----
