Re: Spaghetti Squash
I don't know if you've cooked that spaghetti squash yet. I cut mine in half longways, put it cut side down in a baking dish, and put about an inch of water in the baking dish, and bake it in the oven at 350 until it can be poked easily with a fork. This will depend on size, but I'd say about 40 minutes should do it. I drizzle olive oil, fresh garlic, salt, pepper, chopped fresh basil, diced fresh tomato, chopped black olives, and red pepper flakes on mine.
A few more ideas:
butter and parmesean
alfredo sauce = heavy cream, butter, parmesean, black pepper, garlic (whisk this together over medium low heat in a saucepan until everything is melted and sauce is thick
Tomato sauce - if you can find something that's suitable for this WOE. Watch out for sugar!

Re: Spaghetti Squash
I just poke holes in the entire thing, and toss it in the microwave for about 15 minutes. Then I get my trusty oven mitts, and cut it in half, scoop out the seeds & throw them in the trash, and scrape down the sides for the 'noodles.' Easy peasy!
Then I top it with whatever I feel like.
Sometimes just butter, tomatoes, & garlic, sometimes alfredo, sometimes a sauce from whatever else I made with dinner... etc etc. The possibilities are endless!

Re: Spaghetti Squash
you can also mix the cooked and cooled spaghetti with egg, herbs and cheese, form it into patties and cook them like a hash brown patty.~Megs~
