  • Spaghetti Squash

    I bought a spaghetti squash to try something new......now I don't know what to do with it. Anybody have any recipes?

    I don't know if you've cooked that spaghetti squash yet. I cut mine in half longways, put it cut side down in a baking dish, and put about an inch of water in the baking dish, and bake it in the oven at 350 until it can be poked easily with a fork. This will depend on size, but I'd say about 40 minutes should do it. I drizzle olive oil, fresh garlic, salt, pepper, chopped fresh basil, diced fresh tomato, chopped black olives, and red pepper flakes on mine.

    A few more ideas:

    butter and parmesean

    alfredo sauce = heavy cream, butter, parmesean, black pepper, garlic (whisk this together over medium low heat in a saucepan until everything is melted and sauce is thick

    Tomato sauce - if you can find something that's suitable for this WOE. Watch out for sugar!

      You can also cook it the same way but in the microwave, takes about 7 minutes. Usually they have a sticker on them that tells you exactly how to cook them (at least here they do)

        After cooking mine in the microwave I saute it in olive oil and butter with garlic salt. Sometimes I then blend it and add a sprinkle of pamasean(sp?) cheese. Really feels and tastes like mashed taters.

          I just poke holes in the entire thing, and toss it in the microwave for about 15 minutes. Then I get my trusty oven mitts, and cut it in half, scoop out the seeds & throw them in the trash, and scrape down the sides for the 'noodles.' Easy peasy!

          Then I top it with whatever I feel like. Sometimes just butter, tomatoes, & garlic, sometimes alfredo, sometimes a sauce from whatever else I made with dinner... etc etc. The possibilities are endless!

            I make mine in the microwave also, scrape the "noodles" out, then I make the alfredo sauce, pour it over the noodles and add steamed brocc., chicken and mushrooms. It is so good!!!

              Spaghetti squash can be eaten with:



              LC spaghetti sauce (Plain or meat added)

              Alfredo sauce

              Alfredo sauce with sundried tomatoes

              Shrimp, garlic, purple onion, mushroom and olive oil stir fry

              Shrimp, garlic and olive oil stir fry

              Garlic, olive oil, stir fry then add parmesan cheese to the top

              Topped with cream cheese & chives

              Topped with mild shredded cheddar cheese

                you can also mix the cooked and cooled spaghetti with egg, herbs and cheese, form it into patties and cook them like a hash brown patty.

                  Toss with olive oil, fresh garlic and parseamean(SP?) cheese

                  Bake until Golden brown.

                    I usually do mine like you Mrslee, except I've never baked it - I'll have to try that!
