  • Mushrooms and melted cheese

I am a lousy cook. I really don't know my way around the kitchen... but let me tell you, lately I have been craaaving a burger with mushrooms and yummy yummy melting cheese... so here is my question:

what do I do for cheese? do I just melt some cheddar in a pan with some mushrooms?? or do I do it in the microwave? what a goofy question, I know... any suggestions?

This is one of my fav ways to eat a burger. Here is what I do:
First, grill or fry the burger. Then, saute mushrooms in butter. Cover burger with mushrooms, then add slice of cheese. Usually the heat from the mushrooms will melt the cheese. But you can nuke it for 10-15 seconds to hurry it along. HTH

Here is my solution for the perfect burger:

Take about 1/3 lbs each of ground sirloin and 80/20 ground beef mixed together. Season liberally with kosher salt and fresh cracked black pepper.

Heat a cast iron skillet to medium-high or so. Toss in a couple tablespoons of butter and as soon as the fizzing stops put in the burger. Toss some sliced onions and mushrooms around the burger in the skillet so it will soak up some of their flavor as it cooks and so that they will soak up some of the excess butter.

Cook on side 1 for about 2 or 3 minutes, flip only once, and cook on side 2 for the same amount of time, or a little less.

Turn the broiler in your oven on full blast, scoop some of the onions and mushrooms onto the top of the burger, and drop a slice of whatever cheese you prefer on top (I love aged cheddar, gruyere, or gorgonzola for this) and put under the broiler just until the cheese melts all over the onions and mushrooms.

Take it out of the skillet onto a plate, pour the remaining onions and mushrooms around, and enjoy!
