A rhubarb cheesecake or rhubarb-strawberry cobbler with rich buttery crumbles on top sounds delish. There's a ton of lc cheescake recipes on the net.
Rhubarb needs to be cooked down slowly in light syrup. Make the syrup using Splenda or Diabetisweet or malitol or another safe sugar substitute. Simmer chunks of rhubarb in water with the sugar substitute added until the rhubarb is tender and the syrup has thickened. You can adjust the quantity of sweetener to your taste; more will give a thicker syrup. You can also add an artificial thickener when the rhubarb is done such as ThickenThin NotStarch or xanthan gum.
For the buttery crumbles, cut chilled butter into Atkins bake mix and Splenda (I use a food processor) until your mix is the consistency of gritty cornmeal and it holds together fairly well when you press it in your fist. You can also add some cinnamon if you like. I always eyeball my quantities, but if you are unsure, consult a standard high carb recipe for making the crumbly top on a good cobbler and use those quantities with the low carb ingredients.
