  • What's for Lunch? (During Induction)

    Hi All,

    I'm in search of an easy recipe for lunch. I'm sure you know how it goes, lunch is often rushed and we don't have much time to make use the oven/stove top to make a dish. I was used to having sandwiches but now that is not an option. I also don't like the idea of eating all of my veggies at lunch because I like to have some with dinner. And 1 cup of veggies for lunch isn't very filling.

    What I have been doing is having a can of tuna mixed with mayo and a few slices of cucumber OR Egg drop soup but I'm quite disgusted with both at this point and need some variation.

    If you have a SIMPLE and QUICK induction recipe that doesn't require baking or stove top preparation time, Please share

    I LOVE Egg drop soup...
    *Edited... I thought you were looking for a recipe for egg drop soup.... *






    Other options.. roll roast beef or turkey around some cheese, and then some romaine or cabbage around that... I like to add hot mustard to mine.

    Chef salad... good every time.

    Fried cabbage with a bit of hot pepper paste and then throw in whatever meat leftovers.

    Any leftovers?

    Chicken or beef veggie soup..

    Daily Goals:
    No wasted carbs.
    Water intake .5 -1 gallon.
    Exercise 60 minutes 5x week
    Get in the right veggies.

      With some planning, you can make lunch quick and easy. Make things in advance!

      On Sundays, I cook several induction-friendly dishes (this board has lots and so does Linda's Low-Carb Recipes which is here http://users3.ev1.net/~fontlady/recipes.html )

      After everything is cooled, I separate my food into portion-sized amounts. Then, when I need lunch or dinner, I just decide what I want and warm it in the microwave. Voila!!! quick and easy.

        I go and buy a big family pack of steaks, pork chops, chicken etc. and cook all at one time. I buy all my fresh veggies, cheese and pack in baggies. Grab a piece of meat and some veggies and go. I can eat my meat cold, it doesnt matter to me.

          You can still have your sandwiches. Go to the 14 day Induction Forum and read the sticky post called "Induction Recipe Basics". There is a totally Induction legal recipe for sandwich bread.

          I typically eat leftovers from last night's dinner for lunch.
