Crushed pork rinds, parmesan cheese, flax seed, etc. would all work.
Also, try using meat with a decent bit of fat content and the balls should hold together with just an egg mixed into the ground meat, no other binders needed.

I just got a great deal on ground beef at the market (it was marked sell by today). So I mixed up a TON of meatballs. Here is my quick recipe:
For each pound of ground beef:
beat one egg, add a couple of tablespoons of parmesan cheese and italian herbs (oregano, basil, garlic, etc). Mix together. Knead in fresh ground beef with your hands. Add 1/3 cup of crushed pork rinds, again with your hands.
turn over mixture onto a clean cutting board and form into a rectangle. Use a pizza cutter to cut into strips, then go the opposite direction to cut into squares. Now they will be of "uniform" size. Roll in your palms and space them out, not touching, in a foil lined baking pan. Bake 15-20 minutes, or until no longer pink in the middle (may go longer due to size) in a preheated 350 oven. (The foil is a lifesaver in clean up time! Just toss it!).
Let cool on paper towels. These can be made IN BULK in advance, and then frozen in zip locks.
Italian meatballs: bake covered in pasta sauce, covered with mozzerella cheese. You won't even miss the pasta!
Stroganoff / Swedish meatballs: use a low carb recipe to bake these, yummy!
BBQ meatballs: cover in low carb BBQ sauce.

If you want an even faster/easier approach to meatballs try meatcubes.
Take any meatball mixture and bake it in a loaf pan (like meatloaf). Once it's done, slice it into cubes. When you add the cubes to sauce, the corners will break off when you stir them, but they'll taste the same as balls. The finished product won't be as appealing to the eye, but it will save you some time/labor from not having to roll each ball.
