    What parts of the chicken, what type of dish, what have you looked at before that you like, come on, you have to give more info than that.

      I have a great chicken recipe but it requires a special serving dish. You have to get the oval deep-dish individual serving dishes (by Corning?) that are 7.5" long by 4.5" wide and 1.5" deep. These are available basically everywhere (or not...depending on where you live! ensive ).

      Assuming you have that, this couldn't be simpler. I cook for myself, so here's how I make this "Smothered Chicken" (one of the few pre-Atkins recipes that survived the switch to this WOE) for one (increase as needed for more). Bake a boneless chicken breast at 350 degrees for 25 minutes in a baking dish of any kind. While it's cooking, empty half a can of chicken broth in a small saucepan. Add fresh sliced mushrooms--I plan ahead so my veggie allowance lets me add 2 cups' worth, but that may be way more mushrooms than you want. Add some sliced onion (for 2 cups of mushrooms, I only add one onion slice, cut into fourths, you may want more). This broth concoction heats while the chicken is cooking; the mushrooms will cook down and the onion will soften. When the chicken is cooked, remove it from the oven and turn on the broiler. Put the chicken in the bottom of the individual deep dish. Spoon the mushrooms/onion over it and add broth till the broth comes about halfway up the dish. Sprinkle freshly grated Mozzarella cheese over the top. Put it under the broiler (your deep dish must be able to withstand oven use!) and keep an eye on it, removing it when the cheese has melted (a tiny bit of browning is fine but don't let it burn!). That's it--enjoy! This looks like a small meal to have taken up most of your veggies for the day, but it is incredibly filling!

        that chicken sounds really great... but you know whats even greater, is the way you look!!!! :yes You look amazing, way to loose! See is seein results like that, that makes me wanna always be faithful to Atkins! :icondance

            Mine is pretty easy.

            Cheesy Pepperoni Chicken
            Grill chicken breast on Geroge Forman grill. Turn oven to broil, preferably low. Place chicken in dish, top with sliced pepperoni, lc pizza sauce* and mix of shredded cheddar and mozzarella.
            Put under broiler until cheese is melted, bubbly and slightly browning.

            *pizza sauce-watch carb and sugar content. I found a all natural pizza sauce that has 1 carb per 1/4 cup serving. And you really do not need more than that for this dish.

              Chicken Taco Salad

              Boil a pound of skinless chicken breasts. Cool and shred chicken. Heat chicken with a packet of taco season (follow directions on back of packet.)
              Serve on bed of lettuce, top with cheese, tomato, and sour cream.
              Delish!
              The kids just wrap in a tortilla.

                What type of taco seasoning do you use? I have always found the ones at the store have sugar, potato starch and lots of carbs. I make my own, but would like to know the brand you use. Thanks

                  I am not sure what brand taco seasoning it is. I will have to look when I go to the store. But I do know that it has something like 3 carbs per serving. Even so I can keep my carbs under 20.
                  I'm very interested in how you make your own! Do share. :nod

                    Taco seasoning is easy. Just combine the following to taste (if it is your first time, add a bit of each as the meat cooks, taste, and add more till you find the balance you like):

                    Cumin
                    Cayenne
                    Mexican Oregano
                    Chili Powder (I prefer Chipotle powder or powdered jalepeno)
                    Salt
                    Black Pepper
                    Dash of vinegar/lemon juice

                      a chicken recipe...

                      Chicken, Sausage and Mushroom Casserole

                      3-4 chicken breasts, pounded even but not too thin
                      salt, pepper, garlic powder (to taste)
                      2 tbsp olive oil
                      1/4 lb. sausage
                      4 oz cream cheese, soft
                      1 cup shredded cheddar, divided
                      8 oz fresh mushrooms, sliced

                      Season chicken, brown 3 minutes each side in oil. Set aside. Crumble and cook sausage til brown. Drain well. Preheat oven to 350. Spray casserole dish and place mushrooms in bottom. Place chicken on top. Mix sausage, cream cheese, 1/2 of the cheddar and spoon (and smooth) over chicken. Cover and bake 30 min. Remove cover, sprinkle with remaining cheese and bake 15 min until chicken completely cooked.

                        I just posted this to another message. It is my all time favorite chicken recipe! The whole family loves it.

                        Something REALLY yummy to try is to pound out boneless chicken breasts with a mallet until they're about 1/2 inch thick, then place thin slices of Monterey Jack cheese in the middle and fold over and secure with wooden skewers. Dip each piece in melted butter and bread with crushed pork rinds ( I crush mine in a blender) and parmesan cheese. Season with garlic salt and parsley and pour some more melted butter on top. Bake in a little olive oil until nice and brown.

                          I believe the brand of taco seasoning made w/o sugar is Mike Fowlers brand, I get it at Harrist Teeter.

                              I made some chicken the other day that my whole family loved.. I just fried it in veg. oil & a little butter.. On top of the chicken I seasoned it with salt, pepper, paprika & red pepper.. It was so good..
                              I was really surprized as I loved my chicken breaded..
