I have an Ice cream machine that has sat in the closet since I started this WOE. I figure using Splenda instead of sugar cuts way down on the carbs. But, can I use just cream or do I have to add the milk. I was planning on simple vanilla.

I use the keto vanilla, but since I am using UK Double Cream rather than US Heavy Cream I use only Cream and Water - with the egg and Keto powder.
Glycerin is well worth adding as an emulsifying agent. One teaspoon in the mix.

Ice cream get's a little tricky in that, without the antifreeze properties of sugar, it tends to turn rock hard when you put it in the freezer.
Solution? Don't put it in the freezer. Make it and eat it
Or
Use another natural antifreeze like glycerin (don't forget to count the carbs) or sugar alcohols.

So about one teaspon to a litre or US Quart of mix.
It will make the ice cream a little smoother, but it will not stop it freezing hard.
I freeze my ice cream in half cup portions - that makes it easy to defrost.
I have some ramekins which hold just 4 fl oz - perfect. I suppose disposable plastic cups might do.
