  • Your Favourite Cheesecake Recipe!

    Isn't it required that everyone on Atkins have their own cheesecake recipe that they keep near and dear?

    I'm interested in trying a few varieties and throwing them in the freezer to have around for the holidays.

    I'm toying around with an idea of a flax crust...we'll see how that works out!

    Unless you like a slimy, insipid 'crust', I wouldn't use flax. The best crusts are those that use nuts, like almonds, mixed with a bit of protein powder. Unfortunately, these nut crusts are off limits for Induction.

    As for the cheesecake itself, I just follow the recipe on the package of Philadelphia cream cheese. That recipe on the package gives you an approximate of the cheesecake served at Lindy's restaurant in NYC (and the Lindy's cheesecake is the cheesecakes other cheesecakes strive to be.)

    The things to remember about cheesecakes are :

    1. If you want a dense, creamy cheese cake DON'T BEAT the batter. Beating the batter incorporates air, which gives the cheesecake a grainy, airy texture. Just make sure your cream cheese is very soft (pop it in the microwave for a few seconds to soft it): it should be soft enough so that you can stir the remaining ingredients into the cheese.

    2. Bake it in a water bath. This promotes even baking.

    3. Don't overcook the cheesecake. Overcooking will result in a dry textured cheesecake. Cheesecake is essentially a baked custard. If you overcook a custard it becomes grainy. If the very center of the cheesecake jiggles alittle, it's cooked.

    4. Don't shock your cheesecake. They should be cooled slowly. Preferrably, overnight in the turned off oven with the door slightly ajar. If this isn't possible, put the cheesecake in a large pot and cover it tightly. If that isn't possible, cover the hot cheesecake with aluminium foil and drape a towel over it. Allow it to cool overnight, then refrigerate for storage. Cheesecakes taste better when served at room temperature.

      I made George Stellas NY Ricotta Cheesecake for thanksgiving, it was awesome, no one knew it was low carb and everyone loved it! I added a crust made from ground almonds, flax and butter per Sadies recipe, here is the link for the cheesecake

        Killer, here is a pic of the cheesecake, I decorated it with melted sugarfree chocolate and pecans

          What kind of cheesecake do you want? I like chocolate cheesecakes, so I made one modified from a Hershey's recipe. It is definitely not induction friendly, though.           This is how I made mine:
          3 packages Philly cream cheese, softened
          1 cup granulated splenda*
          2-4 tablespoons Da Vinci SF Kahlua syrup
          2 tsp decaff instant coffee (if you want a mocha flavor)
          1 T soy flour
          1/2 cup Hershey's special dark cocoa
          8 oz sour cream
          1.5 tsp vanilla extract
          .5 tsp almond extract
          3 eggs

          *I've also used the equivalent liquid stevia, however, I find that a granular substitute really gives it a lot more structure, but more carbs.

          I used the same cooking instructions as given. Note that there are 12 servings, not 8. A little goes a long way, though...it is very rich!

              These all look so great! I feel like a kid in a low carb candy store...hehe.

              I'm not looking for anything in particular. Just a treat once in awhile for variety. Yours looks AMAZING, Gizmo!

                  Thanks girls. I'm not much of a baker, I can cook real food pretty well but baking has never been my forte'! so I was a little bit proud of how good it came out, it was very rich and yummy! George Stella's recipes are always good though IMO.

                        That's also my favourite one. Everytime I make it, everyone raves, and has no idea its low carb!
