Anyone ever try making these with Soy Flour and splenda?
Just curious.... I would love to make them but not quite sure how they would turnout.

Nope, I haven't tried. Although the flax pancake recipe might be a decent substitute. The only problem I can see is that pizzelles are crisp. Part of that crispness is due to the flour and part of it is due to the sugar. Splenda doesn't crystalize like sugar does, so you will get the sweetness but you won't get the textural properties sugar has. You can try to counteract that by "baking" the pizzelles in the oven after they cook in the pizzelle mold---using the same principle as biscotti. Baking the pizzelles again make them crispy.
Do you buy almond flour or make your own? I have never seen almond flour at any of the markets in my city.
Good tip about the crispness.... I never would have thought of that.

Yeah, can I just say that almond flour is my absolute nemisis. I cannot find it in any grocery store, in any state, I have ever been. Has anyone ever seen it at a Trader Joe's?

Bob's Redmill carries an "Almond Meal" product. You can find Bob's at most supermarkets. If you can't find it, then buy blanched almonds and toss it in a food processor and pulse until you get a fine powder. You'll have to do this is smallish batches, otherwise you might end up with almond butter. Also, if you add a tiny bit of protein powder to the almonds, this helps to prevent them from getting too oily and turning into almond butter.
The other alternative is if you recipe includes an egg, pulse the almonds until they are pretty finely ground, then add the egg and process until smooth.
We have almond flour at WholeFoods and at Harris Teeter grocery stores here. Beware though that the price can vary greatly! its like 15.99 a lb at Harris Teeter, and at Whole foods in the bulk bin section you can get it for only 4.99 a lb! Big difference.
