  • Leftover turkey ideas/recipes?

    Our local grocery store had good sized turkeys on sale today for .59 -- vs. the $5 a pound for chicken! So I bought 3 -- I have a larger freezer. Have on roasting for dinner tonight, but am wondering what to do with the leftovers. All I can think of is turkey salad and stir fry with turkey in it. Maybe sliced turkey with brocolli and a cheese sauce, too.

    I'm still on Induction and DH is on the lowest rung of OWL. Anyone have any leftover thanksgiving recipes?

    roast the turkey carcass after you get all the extra meat off, then boil it down for stock with some onions, celery and a little chicken base. Roasting the carcass gives you richer flavor. You can enjoy it just as turkey soup, add red pepper flakes for zing, and you can add chopped kale or escarole to it when you reheat it for extra nutrition.

      That's a great idea, and one I normally do. I make GREAT turkey soup. Unfortunately, it's just too hot here for soup this time of year. I plan on putting the carcass in the freezer for the Fall, though.
