    Hi! I've got a can of salmon and want to make salmon patties that are induction acceptable. Can someone provide the recipe? Thanks!

    Not hard at all. Drain the salmon very thoroughly until it is dry - squeeze it in a strainer if necessary. Toss the salmon into a mixing bowl. Moisten with a bit of good quality mayonnaise, half a tablespoon or so for a can of salmon. You can add some crushed pork rind crumbs (a few tablespoons) for consistency, and other ingredients are optional - chopped dill pickles, capers, a bit of chopped celery, Italian herbs, garlic powder or fresh crushed garlic, cracked black pepper etc. Count the carbs on the other ingredients.

    If you wanted to try to "bread" the patties, shape them and then press them in a plate of more finely crushed pork rinds seasoned with whatever herbs or spices you like best. You want small burger sized patties.

    Fry over moderate heat in a little canola oil until warmed through and crisp on the outside, 5-8 minutes.
