        wow, what a great link! I am on my way to get arbol chilies for that orange salsa, I think I would love it on my omelettes! And now I have a better idea for my sauce for my loaf too!

          I found pork shoulder roast boneless marked down at the supermarket! Hooray! $3.00 for 4 lbs of meat!!!

          I made the carnitas yesterday and THEY ARE SO GOOD! I love to eat them in a salad with greens and guacamole (homemade, so it is safe). I made homemade salsa as well. Would have been better with crema mexicana but I didn't have any on hand.

          Very flavorful recipe ... and I have a ton left over for snacking!

            texannie, as soon as my baby lets me eat things other than soup (morning sickness) I will definitely be trying your recipes, they sound so good. Thanks for sharing!! I LOVE mexican food!!! :hug

              well i dont have an exact recipe, but had this at a local mexican restaurant last night and super good!

              (1 person large meal) Lettuce tacos:

              1 head of lettuce, chopped in half, then the larger outside leaves becomes the "taco shells"

              1/2 cup chopped grilled chicken, with added spices to taste

              1/2 cup chopped grilled eggplant, with spices too

              avocado slices

              fresh salsa

              you just take a lettuce leaf like you would a normal taco, mix in some eggplant, chicken, salsa and avocado for yummy tacos!

              and all the ingredients are induction friendly, and you can just add spice to the eggplant and chicken to make them as spicy as you want.
