  • What to do with Mayo

I bought a whole jar of mayonaisse at the request of my former roommate, who has now moved out and left it with me. I'm not much of a mayo gal (I prefer Miracle Whip), and I feel bad throwing it out.

Does anyone have any creative uses for my jug before it goes bad?

cole slaw---mayo, splenda, shredded cabbage and heavy cream. make the creamy mixture first then mix in the cabbage. I love cole slaw-and it uses quite a bit of mayo. With the splenda it tastes more like miracle whip.

You can put it on broccoli flowerets, red onion, and bacon. Makes a great salad.

I do something similar to Lauren. But I mix mayo 50-50 with sour cream, mix in grated cheese, heat it up until the cheese is melted. Makes a good sauce.

I also use mayo to "extend" condiments like mustard, etc.

Since Miracle Whip has alot of un-Atkins ingredients (high fructose corn syrup and another form of sugar are the number 2 and 3 ingredients), you can use that mayo to make your own Atkins friendly version, by adding Splenda and a teaspoon or two of dry mustard to a cup of regular mayonnaise. you might want to add a drop or two of lemon juice to it too.

Re: What to do with Mayo

Mayo Hair Conditioner really works! I perm my hair (because it's so straight and needs alittle body!) and to the mayo conditioner about a week after the perm---helps the "fried" ends. Even if you have short hair you can use it. You wash your hair. Then work in the mayo. Wrap your hair in plastic wrap (the heat will help the oils to penetrate). Let it sit for about 30 minutes. Then rinse and shampoo.

You can use olive oil in the same manner.

PS: Here's a tip from a dermatologist I once worked for (briefly). Unflavored Crisco vegetable shortening is as effective for dry skin as the heavy emollulent creams like Eucerin and Aquaphor.

Linda Sue's recipe website (http://users3.ev1.net/~fontlady/recipes.html) has many great recipes that use mayo. Here are some of my favorites:

Re: What to do with Mayo

Store bought mayo = blah. Toss it in the trash where it belongs and make your own with fresh eggs and oil. There is a whole world of taste difference here.

Homemade mayonnaise can be flavored with crushed raw garlic, horseradish, wasabi powder, curry powder, chili peppers and many other good things. Curry mayo is awesome in a fauxtato cauliflower salad. Wasabi mayo totally rocks on top of sashimi. Garlic mayo is a fantastic salad dressing, especially with some crumbled blue cheese and toasted walnuts. The basic mayo is great to bake with, especially when working with a lower fat white fish. Put a dollop of seasoned mayo and some plump shrimp and perhaps some crabmeat or lobster on a whitefish fillet, roll up and bake. Delish.

Google for any homemade mayonnaise recipe; they're all pretty much Atkins-friendly as they involve only eggs, oil, vinegar or lemon juice and flavoring to your taste.
