1/4 cup finely ground pork rinds* (use a food processor)
1/4 cup finely minced cilantro
a few dashes of tabsco (or a finely minced jalepeno) MMM :nod
1 tablespoon of mayo (no sugar added)
Vegetable oil
1. Mix crabmeat, and everything else form into 6 patties about 1 inch thick. chill for 15 mins or so
2. Pour oil into heavy large skillet to 1/2 inch depth; heat over medium heat. Brown crab cakes in batches for 3-5 minutes on each side or until brown and crispy. Drain on paper towels!
*(if you find you dont like the flavor of pork rinds, use just a tablespoon of the crumbs to bind it and you wont even know they are there
