  • Kohlrabi anyone???

    Does anyone know of any recipes for Kohlrabi?? My husband just brought 3 of them home for me and I have no clue what to do with them!!

    Never heard of it! LOL, but I found this recipe



    Kohlrabi Saute

    4 md Kohlrabi bulbs
    1 tb Butter or margarine
    1 tb Olive oil
    1 Garlic clove; finely chopped
    1 md Onion; chopped
    1 tb Lemon juice
    2 tb Parsley; chopped
    Salt & freshly ground pepper
    2 tb sour cream


    Peel the tough outer skin from the kohlrabi, then coarsely grate the bulbs. In a skillet, heat butter and olive oil. Add garlic, onion and kohlrabi and saute, stirring for 5 to 7 minutes until kohlrabi is tender crisp. Stir in lemon juice and parsley, then season with salt and pepper to taste. Stir in sour cream, and serve hot. Yield: 4 to 6 servings.

      Kohlrabi-Mushroom Soup

      3 tb Oil
      1 md Onion; chopped
      1 Clove garlic; minced
      1/4 lb Mushrooms; sliced
      2 md Tomatoes; seeded and coarsely chopped
      4 c Chicken stock
      4 sm Kohlrabi; peeled and sliced
      Salt and pepper
      2 ts Fresh dill


      In a medium saucepan, heat the oil. Cook the onion, garlic, and mushroom over medium-high heat until the mushroom begins to color. Stir in the tomato and cook for another 3 minutes. Add the stock, bring to a boil, and add the kohlrabi. Lower the heat and simmer for 15 minutes. Season with salt and pepper and stir in the dill. Serves 4.

        Sauteed Kohlrabi

        2 Good sized kohlrabi; peeled - trimmed of leaves
        1 ts Salt
        1 md Onion; peeled and diced
        4 tb Sweet butter
        1 tb Chopped fresh marjoram or
        1 tb Chopped fresh basil


        Grate the kohlrabi in a food processor or by hand. Sprinkle with salt and allow to sit in a colander for 30 minutes. Squeeze water out. Melt butter in a saute pan. Brown onions and stir in kohlrabi. Turn heat to low, cover and simmer for 10 minutes. Uncover and turn up the heat to medium. Cook another 2 minutes. Add fresh herbs.

              I love kohlrabi! If yours has the leaves and stems on them, don't throw the stems and leaves away because they are completely edible and taste similar to cabbage. The bulb part you can use as a "potato" substitute. So you can use them in stews, mash them, fry them, roast them.

                I love kohlrabi! Used to eat it raw as a kid, peeled, lil salt and some pepper and it was very reminiscent of a tater!

                    If you do, please let me know how you like it. The cauliflower substitute recipes for mashed potatos really suck IMO and I'd love to find a substitute that actually tastes good!

                      I made faux apples with them last weekend. Peel and dice, sautee in butter for 7-10 minutes, add cinnamon and 1 packet splenda. YUMMY!

                            I made the mashed Kohlrabi tonight. I boiled it than mashed it with butter. I loved it but I have to say, it didnt taste anything like mashed potatoes!! I thought it tasted like a toss between cauliflower and cabbage but my husband thought it tasted like a rutabaga. Anyway, it's worth trying!!

                              I made some kohlrabi last night. boiiled it and then served it in slices. I LOVED it. could have easily eaten a bowl of the stuff. tastes very similar to rutabega.
