  • Baked chicken?

    Hi everyone. I'm a horrible cook , and I don't have much time to spend in the kitchen. So what are some easy (and yummy, of course) recipes I could make for baked chicken? Any ideas?

    I don't quite understand your question -- do you want to know how to bake a chicken or do you want recipes to go along with baked chicken?

      I want to make chicken like KFC's. I don't know if it's fried, or what. Just drumsticks, thighs, etc. Something that's low in carbs. I just want something easy I can throw in the oven for a while and not worry about it. Sorry I didn't make this clearer. I'm not sure exactly what its called.

        What rung of OWL are you on? Or are you on Induction? Makes a big difference.

            Hey, you're in luck. One of the best combinations in my opinion to bread chicken is crushed pork rinds, Parmesan and a little garlic powder. Count the carbs in the garlic powder. Use a light egg wash (1 egg beaten up in a cup of water) to help the stuff stick. Finish with a dash of salt and pepper. Yummy.

              I use these recipes for chicken breasts.

              1. I mix up an egg, soak the chicken breast in the egg and then put the chicken breast in a mixture of parmesan cheese/salt/pepper/garlic powder. Fry it in vegetable oil until done.

              2. Put the chicken breast in a dish, fill up the dish 1/2 way with water and bake at 325 degrees for 1 1/2 hours. You can eat it plain or add something to it. A lot of times, I will bake it this way and then add a low carb BBQ sauce to it and stick it under the broiler for a few minutes. Instead of that, I might top the chicken with mozzarella and cooked onions and put that under the broiler for a few minutes to get it melted.

              3. You can also bake the chicken with Italian dressing (low carb dressing, the "oil" kind of Italina, not the creamy). Fill it up half way in the pan to bake it just like you would if you were baking with water. The Italian taste gets infused in the chicken and tastes great.

              4. This week, I am going to make the chicken like I do when frying it for fried chicken and then when it is done, I am going to melt mozzarella on it and serve it with low carb spaghetti sauce. Kind of like chicken parmesan w/sauce.

                  Chicken Fingers

                  2 skinless, boneless chicken breasts sliced into strips
                  1 egg, well beaten
                  1 cup fresh grated Parmesan cheese
                  1-2 pats of butter
                  1/4 cup of oil


                  Slice chicken into chicken finger pieces or nuggets. Dip into the egg, then roll in mixture of cheeses and fry in butter/oil. Use more cheese as needed.

                  Note: You can add whatever herbs you like to the cheese mixture. You could add cajun spices for heat, or italian herbs, or even lemon pepper. Enjoy!

                    Something REALLY yummy to try is to pound out boneless chicken breasts with a mallet until they're about 1/2 inch thick, then place thin slices of Monterey Jack cheese in the middle and fold over and secure with wooden skewers. Dip each piece in melted butter and bread with crushed pork rinds ( I crush mine in a blender) and parmesan cheese. Season with garlic salt and parsley and pour some more melted butter on top. Bake in a little olive oil until nice and brown.

                      OK, I got some cheap unbreaded catfish nuggets from Walmart and have been trying to think of ideas how to make them. I saw this post and thought maybe it would work with the fish. My family ONLY likes fried fish. Well, I tried it out on myself for lunch in case it didn't work and out of the 5 nuggets I made I only got 2!!!!! My DD chowed them down before I could even get them cut up for her. She was grabbing the others and eating while I was trying to cut one up!! LOL, now she's saying "mo, mo, mo pwease!" I'm going to try to distract her with some veggies and SF jello, but if it doesn't work I guess I'll be making more of these!!!! Thanks SaraS!
