  • Oysters-

    The end of oyster season isnt too far away and Ive been thinking about oyster stew for 2 weeks now. (sadly not an option because I used to dump crackers into it and inhale lol). Does anyone have a fabulous recipe for oysters they would like to share? I love them fried (alas, no batter), Rockefeller and stewed (oh the milk and the crackers!). I'm open to most things food wise, I love new stuff and the only allergies I have is to bell peppers (green, red, yellow etc) but not other peppers (banana, jalepeno, chili etc).

    I like to squirt a little lemon juice on them and wrap them in bacon and grill them. You can add a slice of water chestnut to them before wrapping in bacon to give it a little crunch..they're called angels on horseback when you do them that way.

      Oysters Rockefeller can be made in a legal way. Just skip the bread crumbs.

      Grand Central Station Oyster Stew is also "friendly" use cream and water instead of the half-and-half

      For scalloped oysters (like this recipe: http://www.dianaskitchen.com/page/casserole/cass25.htm), I would alter that recipe into oysters in cream sauce. Ditch the bread crumbs. Put the cream and other ingredients, except the oysters, into a saucepan and boil until the cream sauce is thickened. Then add the oysters and allow to poach in the hot sauce. Then serve with something like spaghetti squash

        MoG the bacon wrapped oysters sound incredible! (minus water chestnuts, Im not a fan). I bet those would be incredible served with a cream sauce to dip in or ontop of hot wilted spinach.... oh yummy! thank you!

        Megs, I might give that scalloped oyster one a shot, it sounds fabulously rich! Im just very concerned that if I try a soup/stew with them, Im going to go insane wanting crackers. I never ate crackers unless it was with oyster stew, dont know if Im strong enough yet to leave that bad habit behind!

          If you boil heavy cream, it will thicken to a nice sauce that coats the back of a spoon. In fact, if you want to make an easy pan gravy for sauteed chicken, you add alittle heavy cream to the pan, let it boil and thicken.

          So, you can try to make the scalloped oysters by making a cream sauce and adding the oysters and of course, leaving out the bread crumbs. Then use it as a sauce for spaghetti squash or zucchini noodles.

            MoG, I had to tell you..... I made the bacon wrapped oysters last night (forgot the lemon juice though) and I dont know if I love them more or you more for sharing the recipe! they were absoulutly incredible! Positively decadent and filled my craving for the oysters perfectly. Thank you thank you!

              WOW! I'm so glad you enjoyed them! You're making me want some too! I haven't had them in ages and ages. Unfortunatley I live with someone who is not real big on seafood. Maybe I can talk him into giving them a try! I'll just show him your post to convince him!
