  • Breading?

    OK I need a make-do breading for chicken and just any other meat that you would normally bread before you fry in oil.

    Dip it in egg, then coat it with parmesean and spices.

        hey dustin. I throw some pork rinds in the food processor and chop the heck outta them, mix with some parmesean and spices and use that. There is a good recipe in your copy of DANDR for parmesean chicken strips and more or less, the breading part of the recipe is what I use.

            DANDR = Dr. Atkins New Diet Revolution. The book we are using.

              Try soy grits...

              We found soy grits at a whole foods cooperative in Erie PA that made a decent chicken coating. A 1/4 cup serving of soy grits has 12 total carbs, 6 fiber, 3 sugar, 140 cal total 60 from fat.

              Try this recipe:
              The wife rinsed the chicken (3 boneless and skinless breasts), blotted it dry then dipped it in the grits, pan fried them in butter. I then made a "gravy" by pouring out half of the pan drippings, adding heavy whipping cream to the pan lettting it simmer for a couple of minutes, making sure that you keep stirring it to keep it from burning. Use a lower heat setting, the cream should just be slightly bubbling. Before you remove it from the heat add a couple of tablespoons of spicy mustard. Put this gravy on the fried chicken and it tastes great!

              You won't miss the breading by using the soy grits.
