  • Ice-cream??

    Im looking for low-carb ice-cream recipes...

    IM tempted to buy an electric ice-cream maker, but dont want to take the plunge until I know there are some tried and tested recipes out there ...

    I don't really want to buy low-carb icecream mixes as they are extreeeeeeeeemely expensive in the UK. so im looking for all natural ingredients..

    This is from my Atkins cookbook

    Read this whole thing before you decide whether or not to use it. I had to tailor make my ice cream custard because I did not use an ice cream maker either. The section for the chocolate calls for an ice cream maker, but I don't see why you have to use one.


    Basic Ice Cream Custard

    2 cups heavy cream
    4 egg yolks
    1/2 vanilla bean (I just used vanilla extract)
    8 packets sugar substitute

    Heat cream in a heavy sauce pan over low heat. Whisk in one egg yolk at a time. Add vanilla and whisk until custard begins to thicken. Remove from heat and cool. Beat one packet of sugar substitute at a time into cooled custard. At this point, the custard is ready to add recipe ingredients that make it ice cream (see additional information below0. Do not overlook the value of refrigerating the custard as is and using as a dessert.

    Chocolate Ice Cream
    1 recipe Basic Ice Cream Custard
    1/2 cup unsweetened cocoa
    2 packets sugar substitute
    2 tablespooons No0Cal chocolate syrup
    2 tablespoons Sugar Free Jell-O Chocolate Instant Pudding Powder

    Prepare basic recipe. Whisk in cocoa. Beat until smooth. Remove from stove and whisk in sugar substitute, chocolate syrup and pudding powder. Cool to room temperature. Place custard in ice cream maker. Churn according to manufacturer's directions.

    Note: I just made the basic recipe and froze it in a plastic container. I checked on it after a few hours and when I started to harden, I stirred it and put it back in the freezer. If you are not going to eat all of it, just leave it in the freezer and then thaw it before you want to eat it. I didn't have an ice cream maker either. I wouldn't say it tastes just like the forbidden real ice cream, but it kind of had the same consistency, a good taste and satisfied me. As for other flavors, I would probably just use a different flavor extract, or if you are in the appropriate rungs (which I assume you are, you look fantastic!!!) you can add berries or whatever you want.

      Vanilla Ice Cream
      Ingredients:
      5 egg yolks
      1 cup Splenda (or 1/2 cup Splenda, 1/2 cup Sweet-N-Low) *
      3 teaspoons no-sugar vanilla extract
      1 1/4 cups heavy cream, whipped
      1 cup water

      Place egg yolks, vanilla extract, sweetener and water in blender. Blend at medium speed for 30 seconds. Fold yolk mixture into whipped cream. Blend well, being careful not to break down volume of whipped cream. Empty into refrigerator tray and freeze for 2 hours.

      Makes 8 1/2-cup servings. 4 net grams of carbohydrate per serving.

      *NOTE: To lower carb count to 2 carbs per serving, use liquid sweetener instead. (Liquid Splenda and liquid Sweet 'n Low make a nice mix.)

        I have come up with my own ice cream recipe.....All my friends love it, and so do I!

        Whisk 6 egg yolks until they turn a little pale...it takes some time.
        Add some sweetener and whisk again.
        Whisk ½ liter of whipping cream in a seperate bowl.
        Mix the whipped cream gently into the eggyolks. Add splenda and vanilla extract to taste.
        For a fluffyer ice cream whisk 6-8 egg whites until you can turn the bowl upside down and they don't fall out, and gently mix them into the ice cream before freezing! (now you can eat the ice cream almost right out of the freezer)
        6 servings.....

        (I also add rhubarb to my ice cream. I just boil the rhubarb with a little water and add splenda to taste...let it cool completely and mix in the ice cream)

          there is an icecream in a ziplock bag you can make....not sure where it is but somewhere in the recipe section im sure. Ive never tried it but I remember 2big talking about it before.
