    2 chicken breasts I need to cook...

    Hey ya'll,

    I have got two nice chicken breasts in the fridge that I need to cook. I am tired of just baked chicken. Any good induction-friendly ideas?

        Mog is such a recipe goddess. Here is another one that she posted that gave me a great pictorial idea: link to recipe
        I like to alternatively roll up the chicken with a smoked ham or bacon and provolone cheese. I've also found adding a tiny bit of mayo helps keep them rolled in place without having to use skewers.

            I love chicken and mushrooms together. how about doing a pan searingon the chicken, remove it, throw some nice fresh shrooms in the pan to saute and then add some heavy cream and some parmesan or asiago cheese and then add the chicken back in?
            My latest kick is Curry Chicken Salad. cook the chicken, cook it and shred it up, add, mayo, onion, celery(if thats your kinda veggie, not mine blech) and then a tablespoon or so of curry powder. The flavor intensifies as it sits so I usually make it ahead of time.

                      Dredge it in egg and parmeson cheese and cook in some oil. Sometimes I even get the tenders and make chicken tenders.
