    What else can you do with this besides fry it. I love it but fried is getting boring.

    Ahhhh...zucchini ....I have a GARDEN full.

    Grate it with a cheese grater - medium grate (peel and all). Mix this with an egg, some parmesan cheese, some oregano, salt & pepper. Mixture should be thick -- add more cheese if you need to. I suppose you could add grated pork rinds too. Drop by spoonfuls on an oiled fry pan or griddle. Like little vegetable pancakes. A nice side dish for any meal.

    Stuff it. Slice lengthwise, scoop out some seeds. Drop in a pot of boiling water for just 3-4 minutes. Remove and drain. Brown some hamburger (drain) and add in some chopped onion, chopped green pepper, chopped tomato, maybe some chopped eggplant if you have it, spices (salt, pepper, oregano, thyme). Put beef mixture in the scooped out zucchini, top with your favorite cheese, bake at 350 until cheese in nicely melted.

    I normally steam mine. Slice in nice thick slices, place in a saucepan with just 1/2 inch of water, add a tablespoon or more of butter, a sprinkle of oregano, bring the water to a boil and reduce heat to very low, cover the pan and simmer until zucchini is tender.

    I also make dill pickles with zucchini - VERY yummy - no sugar.

        Ok so I went to go with you idea and out came this one..lol
        Cut the zuch in 1/2 and scopped out the insides..(ate them..hee hee) Cooked up some chicken diced added hot sauce and layered the bottom of the zuch with sour cream and put the chicken on top..different and crunchy..Thanks for getting my mind going!!!

            Oooooo...that sounds REALLY good!!! Did you bake it in the oven once you stuffed it?? Maybe mix some canned green chilis in with the sour cream - or use cream cheese... Ooooo.. I'm trying this out tonight for dinner! Thanks for the idea!!

            (Thinking some more I used to make a chicken tortilla dish that mixed chopped cooked chicken with cream cheese and green chilis, rolled in a tortilla, then cheese sauce over the top and served with salsa. I think I'm going to try it without the tortilla, stuffed in the zucchini!!! Mmmmmm....

              mmm those sound YUMMY! Can't wait to try them out!

              If you want something simple with them and you don't have time to stuff...grate the zuccini and and saute it with salt, pepper and butter until desired consistency..it's really good too.

                Its also good sauteed with onion ,butter and salt and pepper. Easy but good.

                I like it raw dipped in ranch dressing or onion dip too.

                  You need a specialized cutting tool or good skill with a knife, but if you can cut zucchini into thin noodle-like strips, you can make a delicious "pasta" dish with a hearty tomato and sausage sauce with Italian herbs. Lightly steam or fry the zucchini "noodles" to al dente, and serve them with your sauce. Watch the carb counts if you use a commercially packaged tomato sauce rather than making your own from canned or fresh tomatoes.

                    I slice mine for frying, then fry with real cream butter and top with freshly grated parm...its good and Matt wont eat it so its all mine, which works well as I hadn't planned on sharing...I've also sliced mine and broiled them to 'crispness' and used as chips for taco salads.

                      This recipe came from Rachel Ray's cooking show "Thirty Minute Meals."
                      First you slice zuchinni in 1/4 in. slices and place in layer in pan - I use about an 8x8 corningware dish. Then you sprinkle whatever spices you like - I use salt, pepper, basil - then you sprinkle with parmesan and then mozzarella. Then add another layer of zuchinni, spices, and cheeses. Then pour about 1/4 cup heavy cream into casserole. Bake at 350 until browned and bubbly. This is sooooooo..... good.
