yep you can freeze it and make like a chocolate milk popcycle.
you can make home made pudding too but if you don't have a liquid sugarfree sweetener you end uop with just as many carbs.
Make fudge out of 1cocoa powder and 1 pkg sugarfree sweetener of choice or one of the sugarfree chocloate syrups like the Davinci or the Natures own stevia aweetened one and 1 ounce of cream cheese. you can whip it up as much as you like and then divie it into 4 globs and freeze. let one melt in your mouth and you will not need pudding. if you use the cocoa powder it is .75 carbs each blob if you use the liquid it is under .5 net carbs for each blob.

Cold temperatures numb the taste buds a bit, so the carb countdown milk will not taste as chocolatey nor will it be sweet enough when frozen.
Finding a decent thickener for pudding can be tricky business since the traditional thickener, corn starch, is a no no. As with gravy I think your best bet would be a combination of thickeners, one of which might be guar or xanthan gum. Cream cheese might make a good thickener. Whey protein also might work.
It's a bit of effort, but you can go the egg route and make a chocolate custard.
