I don't know about salsa, but I like to just take tomatoes, onion and cilantro and chop it all up and throw it together. I haven't had it while on atkins and don't know the carb content.

kinda salsa-Pico de Gallo recipe
1 1/2 Cups Tomato, chopped and seeded
1/4 Cup Purple Onion, chopped
1/4 Teaspoon Sugar (sweetener)
1 1/2 Tablespoons Fresh Lime Juice(I use bottled-NOT key lime juice)
1/2 Cup Cilantro, loosely packed
Basically, just chop everything and mix together. It will get soggy if you let it sit overnight, so don't mix together until about an hour before you're ready to eat it. I have created many addicts with this recipe! Lisa

Salsa
I have a salsa maker, shown on TV. Kinda like a food processer, but you turn the crank on the top. Hope you have one.
I put a large can of tomatoes into my little salsa maker, give er a few spins.
Then I add a medium onion, quartered, one jalapeno, cut in a few pieces, salt, pepper, and garlic.
Spin, Spin Spin
!!! Hey you got Salsa! Tastes good

Lots of ingredients, but EVERYONE asks me for this recipe after they try it:
2 medium tomatoes diced
1 medium onion diced
2 cloves garlic crushed
1 green or red bell pepper diced
1 or 2 jalepeno peppers minced
2 cups canned crushed tomato
a big handful cilantro (fresh coriander)
juice of 1 lime
1 tsp ground cumin
1 tsp dried oregano
1/4 to 1/2 tsp salt
a pinch of cayenne (optional)
mix ingredients all together. Add about 1/2 to 2/3 or the ingredients to the bowl of a food processor and pulse until you have a veggie mash. Add this mash back to the rest of the ingredients and chill in the fridge for an hour or two. This gives the flavors a chance to develop.
Enjoy!!

Here is a great green salsa...
Just a note... Tomatillos have much less carbs than red tomatoes
1 cup of red tomatoes 20 carbs to 1 cup of tomatillos 8 carbs
Fresh Tomatillos (you may have seen them in the market... they look like green tomatos with husks on them)
Jalepenos
garlic
onion powder (if desired)
salt
It is hard to give the exact recipe as tomatillos come in different sizes. I usually use three med size tomatillos (size of golf balls) to one jalepeno. ( I like it spicey). Boil tomatillos and jalepenos together for about 15 - 20 minutes. They will both lose their vibrant green color when ready. Blend in blender with a clove of garlic until smooth, i sometimes add a bit of water as the tomatillos tend to thicken once cooled. Add salt to taste.
This recipe is great for pork... stew chunks of pork meat for approx 2 hours. Cover with salsa and stew for 30-60 minutes until pork is tender. You may need to add water to keep from burning.5'10"
