  • Alfredo Sauce for "Shrimp Alfredo"

    I am making Shrimp Alfredo with Spaghetti Squash and I have no idea how to make the alfredo sauce. It also says the shrimp have to be precooked, but I bought them raw. Do I just steam them w/ no seasoning??

    Please help me with this one!

    I make mine with heavy cream 1/2 cup or so, some parm. cheese (about 1/4 -1/2 cup, I like it cheesey) and butter and garlic powder. Put the heavy cream on low to medium heat, warm it up, melt some butter and then add parm cheese and garlic. Keep stirring it while it heats then pour it over your squash and shrimp. Sometimes I put a little sour cream in it to thicken it. Sorry about the measurements, I'm not much of a measurer.

      Steaming or sauteing them in a pan with a little bit of butter or olive oil should be fine.

        Alfredo sauce evolved as a way of showcasing phenomenal cheese. In Italy it began as just butter and Parmigiano Reggiano. When it made the trip over the ocean, American chefs starting adding cream. Cream, butter, black pepper and parm. Most importantly, though, it has to be good parm. Parmigiano Reggiano. The 'king of cheeses.' Get a chunk and grate it yourself. Don't attempt this recipe with Kraft or 4C. If you can afford shrimp, you can afford real parmesan. Done right, alfredo is sublime.

          ditto steam or saute' with out seasoning is fine Peel them, then barely cook them until they are just pink no more!...and for sure what Scott said on the cheese it is so worth the $10 for a very good piece of Reggiano you will not be sorry if you learn to use the good stuff you won't waste money going through the bad first...

          I think Kraft in a can ...tastes just like powdered soap!


          save the hard rind of the reggiano in baggy in the freezer then toss it into soups later for flavoring

            Thanks so much for the great advice! I am getting some tomorrow! I am going to hold off on the shrimp alfredo until I have it!
